About Two Docs Brewing Co.
Located in Lubbock, Texas, Two Docs Brewing Co. is a craft brewery dedicated to crafting unique and high-quality beers that serve the local community. The company values craftsmanship, culture, and its team, and is expanding its operations.
Position Overview
The Head Brewer position is a full-time leadership role responsible for overseeing the entire brewing operation including recipe creation, scheduling production, maintaining quality standards, managing equipment, and supervising brewhouse staff. This role requires technical expertise, passion for craft beer, and leadership capabilities in a dynamic environment.
Key Responsibilities
- Manage the full brewing cycle from grain processing through fermentation and packaging.
- Create and improve recipes for core, seasonal, and specialty beers while documenting processes.
- Ensure consistent quality control across all brewing batches.
- Supervise cellar tasks such as yeast handling, tank sanitation, and fermentation tracking.
- Lead, train, and schedule brewhouse personnel, fostering a positive and safe workplace.
- Collaborate with taproom and sales teams to match production with market demand.
- Engage with brewery associations to represent the company and stay connected with the craft beer industry.
- Oversee routine maintenance and sanitation of brewing equipment and facilities.
- Report equipment needs and improvements to brewery ownership.
- Ensure compliance with Texas Alcoholic Beverage Commission regulations and local health standards.
- Manage supplies including malt, hops, yeast, and other ingredients.
- Plan and update production schedules to support taproom and distribution requirements.
- Monitor and report on production metrics such as yield, efficiency, and waste levels.
Required Qualifications
- At least 1 to 2 years of professional brewing experience, including minimum 1 year in a leadership or supervisory capacity.
- Proven expertise brewing multiple beer styles and using diverse techniques.
- Strong understanding of brewing science including chemistry, microbiology, and sanitation.
- Experience operating and maintaining brew systems, fermenters, brite tanks, and packaging lines.
- Physical capability to lift 55 pounds or more, stand for extended periods, and perform brewery manual labor.
- Possession of a valid driver’s license.
Preferred Qualifications
- Formal brewing education or certifications such as from the Siebel Institute, American Brewers Guild, Cicerone, or BJCP.
- Experience working in small to medium-sized craft breweries producing 1,000 to 5,000 barrels annually.
- Knowledge of the Texas craft beer market and regulatory compliance.
- Familiarity with brewery management software solutions.
Compensation and Benefits
The salary range for the Head Brewer role is $50,000 to $70,000 annually, depending on experience, with a comprehensive benefits package including:
- A monthly health reimbursement allowance of $300 to apply toward ACA-qualified health plans.
- Ten days of paid time off per year for vacation, personal, or illness leave accruing each pay period.
- Eight paid holidays per calendar year specifically for this position, including major U.S. federal holidays and Easter Sunday.
- An annual continuing education allowance up to $1,500 for brewing courses, certifications, or conferences.
- An event attendance budget up to $2,000 annually to participate in major brewing festivals and conferences such as the Great American Beer Festival and Texas Craft Brewers Festival.
- A relocation stipend totaling $2,000 for candidates moving to Lubbock, paid half at hire and half after 90 days.
All above benefits become effective after 90 days of employment.
