Overview
The Chef de Partie specializing in pastry at JW Marriott Singapore will be responsible for preparing specialized meals and substituting ingredients as needed, ensuring strict adherence to culinary standards in food preparation and presentation. This role emphasizes maintaining food quality, proper portioning, and garnishing, as well as monitoring stock and collaborating with kitchen and service staff to ensure smooth service.
Key Responsibilities
- Manage temperature controls for ovens, grills, roasters and broilers to ensure optimal cooking conditions.
- Thaw frozen items appropriately and maintain detailed food logs.
- Ensure accurate portion sizes, food arrangement, and garnishing meet presentation standards.
- Oversee the quality and quantity of prepared food, communicating with the Chef and service team regarding daily specials and inventory.
- Prepare and cook food items, including cold foods, following defined recipes and quality checklists.
- Support management with recruitment, training, scheduling, evaluation, counseling, discipline, and coaching of kitchen staff, acting as a role model.
- Adhere to company safety and security policies, reporting hazards or incidents promptly.
- Maintain professional personal appearance and confidentiality of proprietary information.
- Anticipate guest needs and communicate effectively and professionally with colleagues and guests.
- Contribute positively to team morale and collaborate to meet shared objectives.
- Perform physical job requirements such as standing, bending, lifting up to 25 pounds, and moving around the kitchen safely.
- Carry out additional reasonable tasks as assigned by supervisors.
Preferred Qualifications and Experience
- Technical, Trade, or Vocational School Diploma.
- Minimum of three years’ experience in a related culinary role, preferably pastry.
