Position Overview
The BOH Technician plays a crucial role in maintaining cleanliness, organization, and safety throughout kitchen and food service environments at Carnival Corporation's global destination facilities. This position supports Food & Beverage operations by ensuring sanitation standards are met, assisting with basic food preparation, equipment upkeep, and managing waste disposal in areas including kitchens, pavilions, and beach service zones.
Key Responsibilities
- Maintain hygienic conditions across kitchen, pavilion, and beach food service locations daily.
- Perform regular cleaning tasks including sanitizing waste bins, floors, tables, prep areas, and cooking appliances.
- Daily cleaning of island grills and performing pressure cleaning of bars and pavilion zones during off-ship days.
- Carry out deep cleaning of kitchen systems and appliances such as ice machines, dishwashers, ventilations, grease traps, floor drains, and bar fans on scheduled non-service days.
- Manage weekly inventory rotation and cleaning in refrigerators, chillers, walk-in freezers, and dry storage rooms.
- Assist in maintenance activities in cooperation with Food & Beverage Technicians, including drain upkeep and system servicing.
- Handle collection and proper disposal of cooking oil alongside Environmental Technicians.
- Aid kitchen staff in stock rotation using First-In, First-Out (FIFO) methods and help maintain monthly inventory reports for frozen, refrigerated, and dry goods.
- Monitor refrigeration temperatures daily and report any irregularities immediately.
- Communicate effectively with team members to support smooth Food & Beverage operations.
- Comply with workplace safety, hygiene, environmental policies, and uniform standards.
- Perform other duties as assigned by management to ensure operational excellence.
Skills and Qualifications
- Competent in operating typical food service equipment safely and efficiently.
- Effective multitasking abilities in a fast-paced environment and a proven team player with excellent communication skills.
- Up-to-date full medical certification renewed bi-annually.
- Adherence to uniform protocols including secure hair net usage.
- Basic food preparation skills such as chopping and portioning.
- Understanding and application of food safety and hygiene standards.
- Proficiency with Microsoft Office and data entry for inventory and reporting purposes.
- Detail-oriented with strong problem-solving, decision-making, and organizational skills.
Education and Experience
- Minimum of basic education or equivalent experience; further education in Hospitality or related fields is advantageous.
- Valid health certificate required.
- Previous 1 to 2 years’ experience in kitchen operations, food safety, or sanitation roles preferred.
- Hospitality or food service industry experience is a plus but is not mandatory depending on training provided.
Physical and Other Requirements
- Must be physically capable of lifting and cleaning heavy kitchen equipment and grills.
- Ability to stand for prolonged periods.
- Willingness to work shifts as needed within different destination areas.
Language and Communication
- Strong verbal and written communication skills.
- Ability to collaborate effectively with team members.
