Steward | Kitchen Support & Cleanliness

Role Overview

The Steward is the essential support within the kitchen, ensuring everything behind the scenes contributes directly to a seamless guest experience. You will maintain cleanliness, organise supplies, ensure safety, and uphold hygiene standards to keep the kitchen running efficiently.

Key Duties

• Continuously wash, rinse, and sanitize dishes, utensils, pots, and equipment, operating dishwashers with proper temperature and chemical levels.
• Follow strict chemical usage procedures including the three-sink washing method and maintain chemical safety by proper labeling, storage, dilution, and use of PPE.
• Manage waste by emptying bins before overflow, sorting food waste, recycling, and general refuse, and maintaining cleanliness in waste areas according to scheduled inspections.
• Restock kitchen stations proactively, sweep and mop floors regularly, clear drains after service, and report faulty equipment promptly.
• Keep all kitchen and back-of-house areas tidy, set up properly before service, and complete thorough end-of-shift cleaning to meet NALA standards.

Health, Safety and Compliance

• Maintain high personal hygiene and wear full uniform, reporting any health issues before shifts.
• Adhere to Dubai Municipality Food Code requirements, hold a valid Occupational Health Card, and comply with all sanitation and pest prevention measures.
