Job description
Role Overview
This position leads the daily operations of the kitchen utility team and oversees support functions such as dish room work, overnight cleaning, back dock upkeep, banquet plating, and food delivery to service areas. The role also involves supervising non-cooking kitchen staff, including dishwashers and kitchen helpers, while keeping guest satisfaction, employee engagement, and budget control in balance.
Key Duties
The Steward-Chief is responsible for making sure the kitchen support operation runs smoothly each day, with proper supplies, equipment, cleanliness, and compliance in place.
- Plan and oversee daily kitchen utility activities and related team assignments.
- Order and manage the supplies, tools, equipment, and uniforms needed for staff to perform effectively.
- Track incoming materials and monitor current stock levels.
- Maintain inventories for china, glassware, silverware, food, equipment, smallware, and liquor, and escalate shortages when needed.
- Inspect work areas, equipment, and supplies to ensure service efficiency and compliance with standards.
- Investigate employee accident reports and follow up appropriately.
- Ensure proper upkeep of all kitchen support equipment, including dish room machinery and food transport/holding equipment.
- Enforce correct cleaning procedures for serviceware, floors, machinery, and other operational areas.
- Ensure adherence to all relevant laws, sanitation rules, and food handling standards.
- Keep leaders, peers, and team members informed with timely operational updates.
Leadership Responsibilities
- Lead and motivate the utility team through clear communication, integrity, and consistent example-setting.
- Supervise staff, manage daily workflows, and understand team roles well enough to cover duties when needed.
- Set departmental priorities and provide direction that supports efficiency and effectiveness.
- Maintain team productivity and help drive achievement of performance, team, and budget goals.
- Recognize strong work, build trust and cooperation, and encourage open collaboration.
- Communicate expectations clearly and maintain constructive working relationships.
- Support control of departmental costs and look for opportunities to improve service performance.
- Gather employee feedback and consider the effect of the department on the property’s overall financial goals.
Customer Service Focus
- Participate in meetings and coordinate with executives, peers, and subordinates to improve service quality.
- Ensure daily operations consistently meet guest expectations and service standards.
- Promote guest satisfaction as a central focus in all departmental discussions and improvement efforts.
Human Resource Duties
- Guide team members by setting standards, monitoring performance, and offering support.
- Participate in recruitment, interviews, selection, hiring, and promotions.
- Train employees on safety procedures, sanitation, chemical use, and equipment handling.
- Provide performance feedback based on observed service behavior.
- Review employee satisfaction results and address concerns where possible.
- Apply disciplinary procedures in line with SOPs and local operating procedures, including documentation and peer review processes.
- Ensure company policies are enforced fairly and consistently.
- Take part in progressive discipline actions when required.
Candidate Profile
The employer welcomes candidates with either a secondary-school qualification plus substantial relevant experience, or a hospitality-related diploma/degree plus shorter experience in a food and beverage, culinary, procurement, or similar environment.
