Job description
Role Overview
We are seeking a Head Brewer with over three years of commercial brewing experience to join our team at Cerveza Cito, located in Nzalae/Nzawa, Kitui County, Kenya. The position requires hands-on expertise in all aspects of the brewing process using a 10 to 20 barrel brewhouse.
Key Responsibilities
- Operate and manage brewhouse processes including milling, mashing, lautering, boiling, whirlpooling, knockout, and Clean-in-Place (CIP) procedures.
- Oversee cellar operations including yeast handling, harvesting, fermentation monitoring, and tank sanitation.
- Manage packaging operations such as canning and kegging and provide packaging support including kegging and canning preparation.
- Maintain inventory of raw materials and organize supplies effectively.
- Participate in pilot batch productions and collaborative brewing initiatives.
- Ensure strict adherence to Standard Operating Procedures (SOPs) and maintain CIP discipline.
- Meet production schedules reliably while ensuring recipe consistency and quality.
- Train assistant brewers and support staff to maintain operational standards.
- Demonstrate mechanical aptitude to assist in equipment maintenance and operations.
- Physically capable of lifting up to 55 lbs and working on ladders.
Required Qualifications and Skills
- A minimum of three years of experience in commercial brewing, preferably on a 10-20 barrel brewhouse.
- Familiarity with all stages of brewing operations, including brewhouse, cellar, and packaging.
- Knowledge of fermentation monitoring, data collection, and yeast management.
- Experience with tank sanitation, filtration operations, and CIP routines.
- Ability to follow detailed SOPs and maintain high discipline in processes.
- Good organizational skills for inventory and raw material management.
- Capability to train and mentor team members.
- Strong mechanical skills to handle brewery equipment.
