Job description

Role Overview

We are seeking a Head Brewer with over three years of commercial brewing experience to join our team at Cerveza Cito, located in Nzalae/Nzawa, Kitui County, Kenya. The position requires hands-on expertise in all aspects of the brewing process using a 10 to 20 barrel brewhouse.

Key Responsibilities

  • Operate and manage brewhouse processes including milling, mashing, lautering, boiling, whirlpooling, knockout, and Clean-in-Place (CIP) procedures.
  • Oversee cellar operations including yeast handling, harvesting, fermentation monitoring, and tank sanitation.
  • Manage packaging operations such as canning and kegging and provide packaging support including kegging and canning preparation.
  • Maintain inventory of raw materials and organize supplies effectively.
  • Participate in pilot batch productions and collaborative brewing initiatives.
  • Ensure strict adherence to Standard Operating Procedures (SOPs) and maintain CIP discipline.
  • Meet production schedules reliably while ensuring recipe consistency and quality.
  • Train assistant brewers and support staff to maintain operational standards.
  • Demonstrate mechanical aptitude to assist in equipment maintenance and operations.
  • Physically capable of lifting up to 55 lbs and working on ladders.

Required Qualifications and Skills

  • A minimum of three years of experience in commercial brewing, preferably on a 10-20 barrel brewhouse.
  • Familiarity with all stages of brewing operations, including brewhouse, cellar, and packaging.
  • Knowledge of fermentation monitoring, data collection, and yeast management.
  • Experience with tank sanitation, filtration operations, and CIP routines.
  • Ability to follow detailed SOPs and maintain high discipline in processes.
  • Good organizational skills for inventory and raw material management.
  • Capability to train and mentor team members.
  • Strong mechanical skills to handle brewery equipment.
