Role Overview
The Fish Cutter position is a full-time, on-site job responsible for cutting, filleting, and portioning fish per company and customer specifications, ensuring top quality and yield. Daily duties consist of inspecting fish freshness, removing bones and skin, trimming and cleaning, and organizing prepared products for display or packaging. The role requires adherence to food safety protocols, safe use of knives and cutting equipment, and maintaining a clean workspace. Additional tasks may involve inventory rotation, labeling, and cooperating with team members to meet production goals.
Required Qualifications
- Proficient in safely and effectively cutting, filleting, and portioning fish, demonstrating excellent knife skills and manual dexterity.
- Understanding of basic seafood food safety, sanitation, and storage standards.
- Detail-oriented in assessing product quality, identifying defects, and ensuring uniformity in cuts and portions.
- Physically capable of standing long periods, lifting and moving products, and working in cold or wet conditions.
- Dependable with strong time management skills and ability to follow instructions and procedures accurately.
- Good communication and teamwork skills to collaborate effectively in a group setting.
- Prior experience in fish or meat cutting or food preparation is advantageous but not mandatory; training is available on the job.
- Willing to adhere to all workplace safety measures and comply with local health regulations.
