Position Overview
The Director of Purchasing is responsible for overseeing all procurement activities related to Food and Beverage, Rooms Division, and other hotel departments. This includes budgeting, forecasting, supervising purchasing operations, vendor contract review, and collaboration with culinary teams on menu development. The role demands multitasking abilities and leadership to meet corporate policies and operational scheduling.
Key Responsibilities
- Solicit bids from vendors based on specifications and secure optimal pricing for non-food items, scheduling deliveries to align with operational needs.
- Determine food and beverage requirements for catering according to guaranteed attendance numbers.
- Manage regional or corporate purchasing programs and communicate service requests on behalf of the Food and Beverage Department.
- Partner with Food and Beverage teams to innovate menu offerings and concepts.
- Monitor quality and grades of received products ensuring compliance with hotel standards, maintain inventory levels to reduce waste and optimize turnover.
- Oversee budgeting and forecasting for labor and supply expenses; handle creation and processing of purchase orders for payables.
- Supervise purchasing department staff including recruitment, training, coaching, counseling, and disciplinary actions.
- Ensure compliance with corporate and departmental policies and procurement procedures.
Additional Duties
- Manage departmental schedule planning and vacation coordination.
- Report maintenance or engineering concerns as needed.
- Perform administrative or other duties as directed by management.
Required Knowledge, Skills, and Abilities
- Comprehensive understanding of food, beverage, and printed product procurement.
- Proficiency in purchasing and accounting procedures.
- Strong mathematical skills for interpreting reports and budgets.
- Effective English communication skills—reading, writing, and speaking—to handle documentation and vendor interactions.
- Supervisory capabilities to organize, direct, and develop team members.
Qualifications
- Education: College diploma essential; background in Food & Beverage, Hospitality, Culinary Arts or related fields preferred.
- Experience: Minimum five years in purchasing, inventory, Food & Beverage, or Culinary Arts within a similar hotel environment; at least two years in a supervisory role, ideally in purchasing.
- Licenses: Ability to obtain relevant government certifications; First Aid training is desirable.
