Role Overview and Responsibilities

• Assist in crafting and presenting genuine, superior-quality Chinese dishes aligned with hotel culinary benchmarks and recipes.
• Prepare a broad array of Chinese cuisine items.
• Produce food adhering strictly to established recipes, ensuring quality and portion control standards.
• Support the Chef de Partie in managing the Chinese kitchen section's day-to-day activities.
• Provide leadership and supervision to Commis Chefs and kitchen assistants as necessary.
• Organize mise en place, guaranteeing all ingredients are set before service hours.
• Uphold cleanliness, sanitation, and food safety protocols consistent with HACCP guidelines.
• Track ingredient stocks, assist with inventory management, placing orders, and ensuring proper food storage.
• Store ingredients correctly to preserve freshness and maintain quality.
• Contribute to menu development, including innovating new Chinese dishes and seasonal offerings.
• Reduce food wastage by utilizing ingredients efficiently while controlling costs.
• Ensure kitchen equipment is operated safely and report any maintenance needs promptly.
• Maintain an orderly, tidy, and productive workstation during all shifts.
• Assist in the preparation of buffet, banquet, and special event meals as required.
• Collaborate with the culinary team to provide outstanding food quality and enhance guest satisfaction.

Qualifications and Requirements

• Possess 2 to 3 years minimum experience specializing in Chinese cuisine within luxury hotels, upscale restaurants, or five-star hospitality settings.
• Hold a diploma or relevant certification in Culinary Arts or an equivalent field.
• Demonstrate thorough knowledge of authentic Chinese cuisine, seafood specialties, and traditional cooking methods.
• Maintain elevated standards of presentation and quality expected in luxury hospitality.
• Deep understanding of HACCP, food safety, hygiene, and sanitation practices.
• Experience in high-volume kitchen environments, maintaining consistency and detail attention.
• Capable of efficient performance under the pressures of a fast-paced kitchen setting.
• Strong communication and teamwork abilities to work cohesively across kitchen teams.
• Flexibility to work various shifts, including weekends and public holidays.
