Job description
Role Overview
We are seeking a Sous Chef to oversee kitchen operations within our lounges, ensuring top-quality food preparation adheres to five-star standards while optimizing cost efficiency. This role requires constant coordination with the Culinary Support Team, Sous Chef, and Senior Executive Sous Chef for the latest updates. The incumbent will enforce established food safety and hygiene protocols and educate staff on their critical importance.
Operational Responsibilities
- Collaborate with the Senior Executive Sous Chef to plan and direct food preparation and service across all lounge kitchens.
- Uphold menu specifications and ensure lounge chefs consistently follow buffet and outlet standard operating procedures (SOPs).
- Monitor the quality and quantity of food leaving the kitchen to guarantee efficient, smooth service meeting five-star standards.
- Manage food production to maximize quality and yield while minimizing waste; oversee mise-en-place quality, quantity, and proper storage.
- Assist in forecasting food consumption and place orders for lounge food supplies in a cost-effective manner.
- Support internal communication by linking kitchen staff with other departments effectively.
- Maintain an organized kitchen environment that complies with the highest safety and hygiene standards.
- Lead by example to maintain high personal hygiene and appearance standards within the team.
- Conduct incoming food inspections to verify quality, quantity, and compliance with food safety regulations.
- Oversee food storage practices to ensure optimal condition and implement proper stock rotation across all kitchen areas.
- Report any maintenance issues promptly to the support services team and keep accurate records.
- Ensure efficient deployment of kitchen staff—including Chefs de Partie, Demi Chefs de Partie, Commis Chefs, and Kitchen Stewards—to maximize performance.
- Supervise kitchen personnel, promptly address arising problems, and maintain operational control during challenges.
- Monitor staff adherence to prescribed methods and secure company stock and property.
- Ensure health and safety training completion and proper documentation according to company policy.
- Address disciplinary issues with underperforming staff as necessary.
- Motivate and unify the kitchen team, fostering healthy competition.
- Perform any other duties reasonably assigned.
About You
- Diploma in Hospitality or an equivalent qualification.
- Minimum of four years of relevant experience coupled with a high school qualification.
- Preferred experience within luxury hotels or comparable establishments.
- Previous experience managing a kitchen or holding the role of Chef De Partie.
