Role Overview

The Junior Sommelier is responsible for leading bar operations at the outlet, ensuring bartenders deliver exceptional customer service and the bar functions seamlessly. This role demands expertise in serving both alcoholic and non-alcoholic beverages, skill in wine and cocktail service, and the creativity to develop new drink recipes. The role includes overseeing wine ordering and deliveries, maintaining proper wine storage and presentation, and contributing to a superior guest experience.

Key Responsibilities

• Manage bar operations and supervise bartenders to guarantee exceptional service.
• Provide tailored wine recommendations and pairings aligned with guest preferences and menu options.
• Serve wines and other beverages adhering to professional service standards.
• Maintain thorough knowledge of the wine list, including regions, vintages, varietals, and producers.
• Assist in inventory management, including stock rotation and cellar organization.
• Engage in regular wine tastings and ongoing training to enhance expertise.
• Ensure proper storage, handling, and presentation of all wines and wine service equipment.
• Keep the wine cellar and service areas clean, tidy, and well-organized.
• Stay informed about industry trends and emerging wine producers or regions.
• Champion excellent guest service and elevate the overall dining experience.
• Drive continual development and innovation of cocktails across outlets.
• Implement cost control methods effectively and manage POS system buttons and pricing.
• Maintain and update cocktail menus and a comprehensive database of standard drink recipes.
• Establish and maintain quality and quantity standards for drink preparation.
• Conduct regular quality assurance audits in all outlets.
• Lead new beverage promotions and contribute creative input to ensure their success.
• Apply informed purchasing, storage, and control practices for bar inventory.
• Carry out opening and closing duties efficiently.
• Oversee glassware cleaning, storage, and weekly inventory management.
• Support all guest service aspects in line with core standards.
• Maintain the visual appeal, ambiance, and cleanliness of the bar area.
• Implement a preventative maintenance and cleaning program for glassware and wine equipment.
• Monitor operating supplies and report maintenance requirements promptly.
