Role Purpose
The Hygiene and Sustainability Manager is responsible for overseeing food safety, hygiene protocols, and sustainability initiatives at the resort. This role ensures compliance with local and international standards such as HACCP and ISO 22000, safeguarding guest and staff health. Additionally, the role pioneers the integration of sustainability goals aligned with Accor and Raffles group strategies, supporting environmental preservation and social responsibility within the luxury hospitality environment.
Key Responsibilities - Hygiene
- Design, implement and maintain the resort’s HACCP system ensuring all procedures and documentation comply with standards.
- Conduct audits of domestic and international suppliers to confirm quality and safety of incoming raw materials.
- Oversee routine microbiological testing of food, water, and surfaces, interpreting results and driving corrective actions.
- Perform daily inspections of kitchens, bars, receiving areas, and waste facilities to uphold pristine cleanliness and hygiene standards.
- Serve as primary liaison with Seychelles Public Health Authority and external auditing bodies including LQA, Cristal, and SGS.
- Monitor water treatment systems, Legionella protocols, and swimming pool chemistry to ensure safety.
- Develop and deliver comprehensive training on Food Safety and Personal Hygiene for all F&B, Housekeeping, and Heart-of-House teams.
- Ensure food handlers hold up-to-date health certificates and training on chemical safety and cross-contamination prevention.
- Manage the selection and safe application of cleaning chemicals adhering to Seychelles environmental standards.
- Coordinate the Integrated Pest Management program with external contractors to maintain a pest-free premises.
- Lead hygiene emergency response teams to swiftly contain outbreaks or health crises.
- Maintain a strict zero-tolerance policy for any health and safety violations, exercise authority to halt operations if necessary.
- Exhibit keen attention to detail for identifying subtle hygiene risks others may miss.
Key Responsibilities - Sustainability
- Develop and execute environmental strategies focusing on energy efficiency, green energy, sustainable food practices, plastic waste reduction, biodiversity protection, and community support.
- Manage operational sustainability including pollution control, waste, energy, and water use optimizations.
- Train personnel across departments on environmental issues and sustainable practices.
- Collaborate with local authorities, NGOs, and public bodies on sustainable initiatives.
- Report environmental performance to both internal auditors and external regulatory bodies to ensure compliance and certification.
- Implement and evolve environmental management systems to reduce the hotel’s ecological footprint.
- Promote sustainable tourism awareness among guests and advocate best practices within the local community and Accor group.
- Align sustainability objectives with the General Manager and group leadership, working closely with Raffles Chief Sustainability Officer.

Experience and Qualifications
- Minimum five years’ experience in food safety, hygiene, or quality assurance roles.
- At least two to three years in managerial or supervisory roles within 5-star luxury hotel or resort contexts.
- Proven success leading compliance through HACCP, ISO 22000, or LQA audits.
- Experience working in island environments like Seychelles preferred due to understanding of specific supply chain and climate risks.
- Strong background in training multicultural teams and managing corporate social responsibility strategies.
- Relevant degree in hygiene, food safety, sustainability, or related fields.
