Role Overview
The Head of Procurement is responsible for managing the business’s cost of goods sold and leading sourcing, supplier negotiations, and category strategy across food, beverage, packaging, and other non-product materials. The position plays a key commercial role by improving margins through smarter buying, specification improvements, and close partnership with Product Development, Operations, Finance, and Marketing, including full ownership of Limited Time Offers.
This role reports to the Director of Supply Chain & Procurement and leads the Procurement Manager. The position is based in the office at 110 Greene Street, New York, NY 10012 and is full-time and on-site.
Key Responsibilities
Cost and Margin Ownership
- Take accountability for COGS and gross margin goals across the portfolio and keep leadership updated on performance and corrective actions.
- Spot opportunities to improve margin through specification updates, yield gains, substitutions, and recipe cost reviews.
- Track commodity and input price trends, and use forward-buying or hedging approaches when suitable to protect profitability.
Supplier and Contract Management
- Negotiate pricing, rebates, volume commitments, and commercial terms with suppliers and distributors.
- Run supplier sourcing exercises, tenders, RFQs, and onboarding, and consolidate the supplier base where it improves cost, quality, or reliability.
- Maintain strategic supplier relationships and conduct regular performance reviews against service, quality, and pricing expectations.
- Own the contract portfolio, including drafting, renewals, pricing agreements, and a structured renewal calendar, ensuring all documents are current and properly stored.
- Manage product specification sheets, keeping them accurate, version-controlled, and aligned with agreed commercial terms and cost targets.
- Oversee the full rebate process, from negotiating terms and tracking accruals to ensuring invoices, collections, and reconciliations are completed accurately and on time.
Product Improvement and Category Strategy
- Work with Culinary and R&D teams to identify changes that improve quality, consistency, and margin.
- Lead specification work so products are value-engineered and aligned with cost goals without harming the guest experience.
- Build category strategies for areas such as proteins, produce, dairy, beverages, and packaging, and manage the buying plan for each.
Limited Time Offers and New Products
- Handle procurement for Limited Time Offers from start to finish in collaboration with the Procurement Manager and cross-functional partners.
- Secure supply, pricing, and volume forecasts for launches, and manage exit planning to avoid leftover stock at the end of a promotion.
- Cost LTOs before launch and provide margin guidance to support go/no-go and pricing decisions.
Compliance and Food Safety
- Ensure suppliers meet food safety, quality, traceability, and accreditation requirements, including audits and approvals.
- Support sustainability and responsible sourcing goals across the supplier base.
Leadership
- Lead, coach, and develop the Procurement Manager and wider team by setting goals and strengthening capability.
- Set up procurement processes, controls, and ways of working in line with the Director of Supply Chain & Procurement’s strategy.
Requirements
- Extensive procurement experience in food and beverage, hospitality, foodservice, retail, or FMCG, with clear ownership of COGS and margin.
- A strong record of negotiating with food and beverage suppliers and distributors while delivering measurable savings.
- Solid commercial and analytical capability, including comfort with detailed cost modeling and collaboration with Finance.
- Experience managing or building a procurement team.
- Working knowledge of food safety and quality standards relevant to the category.
- A relevant degree and/or a recognized procurement qualification such as CIPS is preferred.
- Strong negotiation ability with sound commercial judgment.
- High numerical fluency and data confidence, including advanced spreadsheet skills.
- Excellent organization and the ability to handle multiple categories, suppliers, and launches at once.
- A practical, ownership-driven approach suited to a fast-moving environment.
Compensation
The annual salary is $150,000.
