Role Overview and Responsibilities
- Assist in crafting and presenting genuine, superior-quality Chinese dishes aligned with the hotel's standards and recipes.
- Prepare a diverse range of Chinese culinary offerings.
- Ensure all food is made following specific recipes, quality benchmarks, and portion control requirements.
- Support the Chef de Partie in managing daily activities within the Chinese kitchen section.
- Supervise and mentor Commis Chefs and kitchen staff as necessary.
- Organize mise en place, guaranteeing all ingredients are ready ahead of service.
- Maintain hygiene, cleanliness, and food safety in line with HACCP standards.
- Monitor inventory and assist in stock management, ordering, and appropriate food storage.
- Preserve ingredient freshness by following correct storage methods.
- Contribute to menu planning and the development of new Chinese dishes and seasonal offerings.
- Promote efficient ingredient usage to reduce waste and control costs.
- Operate kitchen equipment safely and promptly report any maintenance issues.
- Keep the workstation orderly, clean, and efficient throughout shifts.
- Collaborate in producing food for buffets, banquets, and special events as needed.
- Work closely with the culinary team to ensure exceptional food quality and guest satisfaction.
Qualifications and Experience
- Possess 2 to 3 years of practical experience in Chinese cuisine within upscale hotels, fine dining, or 5-star hospitality contexts.
- Holds a Diploma or certification in Culinary Arts or related disciplines.
- Thorough understanding of authentic Chinese and seafood dishes, including traditional cooking methods.
- Capability to uphold high standards in presentation and quality typical of luxury hospitality.
- Knowledgeable about HACCP guidelines, food safety, hygiene, and sanitation practices.
- Experienced in high-volume kitchen environments, maintaining consistency and detail orientation.
- Able to perform effectively under pressure in dynamic kitchen settings.
- Strong interpersonal and communication skills to foster teamwork across kitchen units.
- Willingness to work various shifts, including weekends and public holidays.
- Professional demeanor with a positive mindset, committed to delivering outstanding guest experiences.
