About The Role

Malibu Brewing Company is a family-owned craft brewery located in Southern California, currently operating a production facility in Westlake Village and preparing to open a pilot brewery in Agoura Hills. We are expanding our team and seeking a skilled Brewer to join a production team of four, including the Brewmaster, Head Brewer & Lab Manager, and Cellarman. We pride ourselves on producing award-winning beer through a disciplined and collaborative process.

Key Responsibilities

  • Independently manage full brew days including milling, mashing, lautering, boiling, and knockout processes, ensuring target gravities, volumes, and timing are met consistently.
  • Oversee fermentation and cellar duties such as yeast pitching and harvesting, temperature regulation, dry hopping, transfers, and tank turnovers.
  • Conduct quality control by sampling and testing for gravity, pH, dissolved oxygen, and sensory characteristics, logging results to maintain batch consistency.
  • Operate, clean, and sanitize brewhouse and cellar equipment, adhering to strict safety and sanitation protocols.
  • Assist packaging processes including kegging, canning, and carbonation to guarantee finished beer quality.
  • Maintain detailed production records and proactively report any process or equipment concerns to the Brewmaster.
  • Collaborate on recipe creation and pilot brews to develop and refine new and existing beers.

Qualifications and Experience

  • Minimum of 2 years professional brewing experience in a production brewery setting.
  • Formal brewing education or credentials such as Siebel, American Brewers Guild, IBD, or equivalent scientific background in chemistry, microbiology, or food science.
  • Proficiency in brewhouse and cellar operations and strong understanding of sanitation and quality control methods to ensure beer cleanliness.
  • Team-oriented mindset with exceptional attention to detail and communication skills.
  • Physical stamina to repeatedly lift up to 55 lbs, stand for entire shifts, and work in various temperature and wet conditions.
  • Availability for early start times, occasional weekends, and adapting to the production schedule cycles.

Preferred Additional Skills

  • Experience with cellar yeast management or laboratory/quality assurance testing.
  • Mechanical skills for troubleshooting pumps, valves, glycol systems, and CIP equipment.
  • Forklift certification and/or experience on packaging lines.
  • Passion for craft beer with a continuous learning attitude.
