About Dinn Rí Group

Dinn Rí Group is a lively center for hospitality and entertainment situated centrally in Carlow town. It uniquely combines accommodation, dining, live entertainment, and nightlife under one venue. The establishment features the award-winning Dinn Rí Bar serving bar food, carvery lunches, and sports viewing; The Terrace, offering an indoor-outdoor environment ideal for casual drinks and celebrations; Brooks Café Restaurant providing breakfast, brunch, lunch, and modern casual dinner options including classic dishes and stone-baked pizzas; and the Dinn Rí Hotel, a boutique hotel with comfortable, centrally positioned lodging. Their nightlife offerings include Tower Live and The Foundry Nightclub, known for hosting major events with cutting-edge sound and lighting alongside frequent live performances.

Role Overview

The Experienced Chef De Partie will be based full time onsite in Carlow, delivering excellent culinary output across Dinn Rí Group’s dining venues. Key duties include preparing and cooking menu items to exact standards, managing a designated kitchen section independently, maintaining efficiency, and ensuring attractive food presentation. Additional responsibilities are assisting menu implementation, offering specials ideas, overseeing stock levels, helping with ordering and waste management, adhering strictly to food safety and hygiene standards, mentoring junior kitchen staff, and working closely with Head and Sous Chefs to facilitate smooth operations, especially during high-demand periods.

Candidate Profile and Qualifications

  • Expertise in food preparation, culinary techniques, and plating with consistent quality and attention to detail.
  • Thorough understanding of food safety practices, HACCP standards, and kitchen hygiene regulations with dedication to compliance.
  • Ability to handle pressure effectively, prioritize tasks during peak times, and maintain professionalism.
  • Team-oriented attitude with strong communication skills and the ability to coach and support less experienced colleagues.
  • Willingness to work flexible hours including evenings, weekends, and public holidays typical of the hospitality sector.
  • Possession of relevant culinary qualifications or formal chef training is preferred; experience in hotels, restaurants, or gastro pubs is advantageous.
  • A genuine passion for food, enthusiasm for menu innovation, and motivation to thrive within a dynamic, guest-centric hospitality team.
