Position Overview
The Chef de Partie plays a crucial role supporting senior chefs in supervising junior kitchen staff, ensuring adherence to recipe accuracy and portion control. A key responsibility includes specializing in sushi preparation and presentation. The role demands strict compliance with food safety and hygiene standards as dictated by company policies and relevant Saudi Arabian regulations, alongside maintaining kitchen cleanliness and organization.
Primary Responsibilities
- Lead and train junior kitchen personnel to uphold high-quality culinary standards and consistency.
- Support senior chefs in menu development and event catering planning.
- Supervise all food preparation stages to ensure quality, ideal portion sizes, and attractive plating.
- Expertly prepare and present sushi with authentic techniques and creative flair.
- Ensure freshness and appropriate handling of raw fish and sushi ingredients, maintaining food safety compliance.
- Maintain kitchen hygiene and oversee compliance with sanitation protocols.
- Manage ingredient inventory, monitor stock levels, and assess ingredient quality.
- Inspect kitchen equipment for issues and coordinate maintenance as needed.
- Enforce company policies and foster professionalism and teamwork within the kitchen.
- Perform additional kitchen duties as required.
Candidate Qualifications
- Previous experience as Chef de Partie in a hotel environment is beneficial.
- Specialized skills in sushi preparation, including rolling, slicing, and presentation.
- Comprehensive knowledge of cooking techniques and food presentation standards.
- Leadership ability to manage daily kitchen operations and staff effectively.
- Strong expertise in food safety and sanitation practices.
