Job Overview

As a Pastry Chef Tournant aboard a cruise ship, you will oversee the day-to-day management and operations of the Pastry Shop ensuring high quality production and presentation of pastries and desserts. You will collaborate with the pastry team to optimize forecasts, reduce waste, maintain hygiene standards, and ensure compliance with health regulations to deliver exceptional culinary experiences.

Key Responsibilities

  • Manage smooth operations and quality control of the Pastry Shop according to company guidelines.
  • Ensure production and attractive presentation of various pastries and desserts for daily menus.
  • Support the CDP Pastry in forecasting production needs and tracking leftovers to minimize food waste and control costs.
  • Assist with arranging and setting up pastry displays for buffets.
  • Maintain thorough knowledge and daily adherence to United States Public Health regulations and standards.
  • Supervise scheduled cleaning and upkeep of pastry equipment to prevent damage, as directed by the Executive Pastry Chef.
  • Prepare the pastry galley for scheduled or surprise inspections by management or health officials.
  • Handle requisition and transport of supplies from main stores to the pastry shop as needed.
  • Ensure recipes and yield quantities conform to company standards and guidelines.
  • Assist with daily pastry consumption reporting as requested by the Executive Chef.
  • Stay informed on ship operations and provide assistance to guests and crew regarding pastry inquiries.
  • Participate in meetings, training sessions, and other work-related activities as required.
  • Perform additional duties assigned by supervisors or management in line with shipboard requirements.

Qualifications and Education

  • At least three years’ experience as a Pastry Cook within upscale hotels, resorts, cruise ships, or banquet services; cruise ship experience is preferred.
  • Strong understanding of cleaning procedures, equipment care, and sanitation standards.
  • Completion of high school or equivalent education.
  • Good proficiency in English communication.
