Role Overview

The Steward plays a vital role in upholding cleanliness, sanitation, and orderliness within the kitchen, stewarding, and back-of-house food service departments. This position ensures all kitchen tools, equipment, dining ware, and appliances are properly cleaned, sanitized, and accessible, enabling efficient culinary and food & beverage operations. Additional responsibilities include managing waste, supporting inventory duties, and adhering strictly to hygiene and food safety protocols established by the hotel.

Key Responsibilities

• Thoroughly clean, wash, sanitize, and store kitchen utensils, crockery, cutlery, glassware, pots, pans, and other kitchen implements.
• Operate dishwashing machinery safely and efficiently to maintain workflow.
• Ensure sufficient stocks of clean kitchen operating supplies during service hours.
• Keep stewarding, kitchen, and back-of-house areas orderly and hygienic.
• Assist with setting up and dismantling kitchen and banquet equipment as required.
• Clean floors, walls, drainage points, workstations, storage areas, and waste zones following cleaning timetables.
• Comply with sanitation procedures to maintain food-safe environments and manage chemicals correctly.
• Maintain hygiene standards for waste bins and garbage collection points, including scheduled deep cleaning.
• Adhere to all food safety, hygiene, sanitation, and HACCP regulations.
• Properly segregate and dispose of food waste and recyclables per guidelines.
• Wear suitable personal protective equipment (PPE) during chemical and equipment handling.
• Immediately report any hygiene issues, equipment faults, or safety risks.
• Participate actively in food safety inspections and internal audits.
• Handle kitchen equipment with care to avoid damage and promptly report any loss or defects.
• Organize and store stewarding supplies and operational equipment efficiently.
• Support inventory checks of crockery, cutlery, glassware, and kitchen appliances.
• Clean and maintain dishwashing machines and stewarding tools daily.
• Promptly and hygienically remove garbage and recyclables, ensuring compliance with environmental and hotel waste policies.
• Carefully manage equipment to reduce breakage and prevent unnecessary waste.
• Collaborate closely with the Culinary, Food & Beverage, and Banquet teams to support daily operations and events.
• Aid colleagues during peak periods and assist with banquet equipment setup and clearance.
• Engage in departmental meetings, trainings, and continuous improvement activities.

Qualifications and Experience

• High School Diploma or an equivalent qualification is required.
• Prior experience in stewarding, kitchen sanitation, or hospitality settings is preferred.
• Experience in hotel or restaurant environments is advantageous, especially within luxury or premium hospitality sectors.
• Experience with hotel pre-opening phases is a plus.
