Role Overview
We seek a motivated and experienced Head Chef to lead kitchen operations for a Hawaiian street food franchise restaurant located in Qatar. This pivotal role encompasses management of food preparation, kitchen standards, team oversight, stock control, and strict adherence to food safety and hygiene regulations.
Key Responsibilities
- Direct daily kitchen operations ensuring seamless workflow across all sections.
- Manage production kitchen activities, butchery processes, and à la carte services.
- Prepare and cook menu dishes faithfully following franchised recipes and presentation quality.
- Supervise, train, and mentor junior chefs and kitchen team members.
- Oversee various stations such as sushi, noodles, tacos, and fried rice.
- Educate the team on knife skills, hygiene practices, food prep techniques, safety standards, and kitchen discipline.
- Maintain consistency in taste, portion sizes, quality, and presentation of all dishes.
- Monitor stock levels, control ordering processes, and ensure availability of fresh ingredients.
- Source supplies considering local market offerings and operational needs.
- Implement waste minimization and support cost efficiency to enhance kitchen profitability.
- Ensure compliance with food safety, sanitation, and hygiene protocols across the kitchen.
- Uphold HACCP standards and local health and safety rules.
- Maintain organized, clean, and fresh kitchen and storage areas at all times.
- Contribute to menu execution, boost operational performance, and pursue kitchen improvements continuously.
Qualifications and Skills
- Demonstrable experience as a Head Chef, Sous Chef, or senior kitchen leader in dynamic restaurant environments.
- Preferably experienced in open kitchen layouts.
- Sound knowledge of franchised restaurant systems and standardized recipe adherence.
- Experience with Hawaiian street food concepts or casual dining involving sushi, noodles, tacos, and fried rice is advantageous.
- Comprehensive understanding of food prep, kitchen operations, and service quality benchmarks.
- Familiar with production kitchens, butchery, and à la carte service procedures.
- Knowledgeable about sourcing and supplier management within the Qatar market.
- Excellent leadership, communication, and organizational abilities.
- Proven capability to train, lead, and motivate junior staff effectively.
- Strong skills in inventory control, procurement, cost management, and waste reduction.
- Thorough understanding of food safety, sanitation, hygiene, and HACCP regulations.
- Preferred certifications include food safety, culinary arts, or related fields.
