About the Role
The Mespil Hotel invites applications for the position of Commis Chef to become part of our kitchen team. This role focuses on supporting the kitchen by assisting with preparation, cooking, and dish presentation while upholding hygiene, safety, and operational standards.
Primary Duties
- Assist senior chefs in the preparation and cooking of dishes as per the menu.
- Maintain rigorous food hygiene standards and comply with HACCP requirements.
- Ensure proper preparation, storage, and labeling of all food items.
- Support smooth kitchen operations during service periods.
- Keep workstations clean, organized, and adequately stocked at all times.
- Assist with receiving goods, storage, and enforce First In First Out (FIFO) stock rotation.
- Adhere to recipes and portion control to guarantee dish consistency.
- Contribute to minimizing food waste and help in controlling kitchen costs.
- Follow all health and safety regulations diligently.
Stock and Inventory
- Help with stock control, ordering supplies, and managing inventory.
- Focus on reducing waste and optimizing ingredient usage.
General Expectations
- Perform efficiently in a fast-paced environment.
- Maintain a professional demeanor and appearance.
- Exhibit flexibility with shifts, including weekends and public holidays.
- Comply with all organizational policies and procedures.
Required Experience and Skills
- Prior kitchen experience, including placements or entry-level roles, is desirable.
- Basic understanding of food preparation and cooking techniques.
- Knowledge of food safety and hygiene regulations.
- Ability to work effectively under pressure and pace.
- Strong communication and teamwork abilities.
- Willingness to learn and advance culinary skills.
- Flexibility for shift work during evenings and weekends.

Qualifications
- Culinary qualification is advantageous but not mandatory.
- Food Safety and HACCP certification is preferred.
