Role overview
This position is for a seasoned production leader to oversee bakery manufacturing activities and keep large-scale operations running efficiently.
Production operations
- Oversee the full bakery production flow, from mixing and forming through baking, cooling, slicing, packaging, and dispatch readiness.
- Make sure daily output goals are met according to the production plan, customer requirements, and quality expectations.
- Build and adjust production schedules together with the Planning, Supply Chain, and Sales teams.
- Track production performance, spot constraints, and introduce corrective actions to raise efficiency and output.
- Maintain uninterrupted production flow while reducing downtime and improving equipment utilization.
- Drive ongoing improvement efforts to increase productivity, capacity, and overall operational performance.
Planning and cost control
- Plan manpower and other resources to match production demand.
- Keep an eye on production costs, including labor, raw material usage, energy consumption, and other operating expenses.
- Support actions that cut losses, waste, and rework.
- Monitor production KPIs such as output, yield, waste percentage, downtime, labor productivity, and OEE.
Quality and food safety
- Ensure the operation follows food safety requirements, including HACCP, GMP, ISO 22000, and SFDA standards.
- Work with Quality Assurance to maintain product consistency and compliance.
- Enforce hygiene, sanitation, allergen management, and traceability procedures.
- Support audits and help close corrective actions on time.
Maintenance and equipment coordination
- Work with Maintenance to ensure preventive maintenance plans are carried out.
- Reduce production disruptions by troubleshooting issues and identifying root causes.
- Assist with installation, commissioning, and optimization of new equipment.
- Ensure bakery machinery is operated and handled correctly.
Cross-functional coordination
- Partner with Quality Assurance on product standards and food safety.
- Coordinate with Maintenance for equipment reliability.
- Align with Supply Chain to secure materials on time.
- Work with Warehouse teams on inventory control.
- Collaborate with R&D on product trials and process improvements.
- Support HR with workforce planning and employee development.
- Take part in factory improvement initiatives and operational excellence programs.
Qualifications and experience
- A bachelor’s degree in Food Technology, Bakery Technology, Industrial Engineering, Manufacturing Engineering, or a similar discipline is required.
- The role calls for 8 to 12 years of experience in industrial bakery manufacturing, FMCG, or food production.
- At least 5 years should have been spent managing large bakery production operations.
- Prior exposure to high-volume bakery items such as buns and rolls is important.
