Food and Beverage Supervisor

Overview

The Food and Beverage Supervisor at The Address Sligo Restaurant is responsible for overseeing daily restaurant operations to ensure excellent guest service, efficient team coordination, and full compliance with company protocols, food safety regulations, and health and safety laws. This role requires leadership during service hours to maintain exceptional operational and service standards, enhancing the dining experiences of guests.

Key Responsibilities

• Deliver superior customer service consistent with hotel standards by greeting, engaging with guests, and addressing feedback or concerns professionally.
• Oversee restaurant activities across breakfast, lunch, dinner, and special events, including pre-shift briefings, staff section assignments, and service quality monitoring.
• Lead and motivate a team comprising Food & Beverage Assistants, Bartenders, and Hosts; provide training, coaching, and mentoring to maintain high performance and morale.
• Possess thorough knowledge of menu items, ingredients, allergen information, drinks including wines, beers, spirits, and cocktails; recommend and upsell effectively while ensuring allergen information is communicated accurately.
• Comply with health and safety standards including HACCP, Food Safety Authority of Ireland guidelines, fire procedures, manual handling, and hygiene protocols; promptly report hazards and accidents.
• Manage cash and POS systems including transaction processing and end-of-shift cash reconciliation, ensuring billing accuracy.
• Monitor and control stock levels, assist with inventory counts, minimize waste, and ensure proper storage and rotation following FIFO practices.
• Coordinate communication between restaurant, kitchen, reception, accommodation, events, maintenance teams and participate in departmental meetings with regular operational updates.
• Ensure adherence to hotel policies, alcohol service laws, GDPR, grooming standards, and licensing regulations.
• Support financial targets by maximizing sales through upselling, controlling labor costs during shifts, minimizing waste and expenses, and assisting with budget goals.
• Complete administrative duties such as daily shift reports, incident records, staff rota assistance, and operational documentation.

Candidate Profile

• A minimum of 2 years of experience in food and beverage roles with prior supervisory experience in busy restaurants or hotels.
• Strong communication, leadership, organizational skills, and the ability to work effectively under pressure.
• Customer-centric attitude, fluency in English, and flexibility to work various shifts including weekends and public holidays.

Preferred Qualifications

• Experience in upscale (4-star or 5-star) hotel environments.
• Certified beverage knowledge such as WSET, Manual Handling, HACCP/Food Safety Level 2, and First Aid qualifications.
• Familiarity with hotel PMS and POS systems like Hotsoft, Opera, or Micros.

Work Environment and Conditions

• Typical working hours are as per contract with morning, evening and split shifts inclusive of weekends and holidays; overtime as required.
