Key Responsibilities
- Lead and manage the stewarding team, encouraging collaboration and driving high performance standards.
- Oversee daily operations of stewarding services across all dining outlets, ensuring cleanliness, hygiene, and compliance with food safety regulations.
- Design and execute strategic cleaning and quality assurance programs to uphold superior cleanliness in kitchens and back-of-house areas, focusing on continuous improvement.
- Manage inventory for cleaning supplies, equipment, and chemicals; analyze consumption to optimize costs and maintain strong vendor relations.
- Schedule stewarding personnel efficiently across multiple outlets and shifts to guarantee appropriate coverage for daily services and events.
- Train and mentor staff on cleaning techniques, safety procedures, equipment use, and compliance, providing regular feedback and evaluations.
- Ensure adherence to health, safety, environmental standards, and waste management protocols through audits and corrective measures.
- Analyze operational metrics to identify opportunities for process enhancements and increased departmental efficiency.
Candidate Requirements
- At least five years of progressive experience in stewarding operations within large-scale Food & Beverage environments, ideally in resorts, hotels, or high-volume settings.
- Proven leadership skills with the ability to motivate and retain varied team sizes.
- In-depth knowledge of maintenance standards for kitchen equipment, crockery, glassware, and utensils.
- Expertise in sanitation methods, food safety regulations (such as HACCP or ISO), and related compliance.
- Strong understanding of health, safety, and environmental guidelines in hospitality.
- Excellent organizational, analytical, and problem-solving capabilities.
- Competence in inventory control, budgeting, and cost optimization.
- Proficient English communication skills; proficiency in additional languages is beneficial.
- Relevant certifications in Food Safety or Hospitality Management preferred.
- Flexibility to work various shifts, including evenings, weekends, and during special occasions.
- Physical fitness to handle demanding kitchen conditions, including long periods of standing and moderate lifting.
