About the role
Sushiwala is creating a sushi brand in Kolkata that aims to make the cuisine accessible at everyday prices for customers across India. This is a founding kitchen position in a cloud-kitchen setup, so the person hired will help shape the operation from the beginning rather than step into an already built system. The role reports directly to the founder.
Core production responsibilities
- Prepare sushi rice to a stable, authentic standard, since it is the base of product quality.
- Produce and assemble sushi items such as maki, uramaki, and selected signature rolls while following fixed standards for taste, portion size, and presentation.
- Work carefully with fish and other ingredients, maintaining freshness, cleanliness, and food-safety discipline.
- Use knives cleanly and precisely so the final product looks premium and holds up well during delivery.
Menu development and recipe work
- Collaborate with the founder to fine-tune recipes so they stay true to the craft while appealing to familiar Indian tastes.
- Create and standardize the sauce range and signature rolls that will define the brand identity.
- Support recipe costing and portion planning to keep quality and margins balanced.
Kitchen systems and team building
- Set up standard operating procedures for rice preparation, rolling, portioning, sauces, and packing so the output remains consistent across shifts and future locations.
- Help train junior kitchen team members as the operation expands.
Food safety and daily operations
- Follow food-safety practices and cold-chain controls in line with FSSAI requirements.
- Plan prep work, monitor stock, and control wastage on a day-to-day basis.
- Keep the workstation and kitchen clean, organized, and ready for inspection at any time.

- High consistency, discipline, and attention to detail across repeated production.
- Willingness to train others and document methods for team use.
