About the Company

About the Role

Kitopi is looking for a skilled and driven Sous Chef specializing in sushi to support the kitchen leadership team in Doha, Qatar. This position calls for hands-on expertise in Japanese cooking, sushi production, seafood handling, and team coordination. The successful candidate will help maintain food quality, smooth operations, and visually appealing presentation standards.

Key Responsibilities

  • Assist the Head Chef with the day-to-day running of the sushi kitchen.
  • Supervise, coach, and develop the sushi team to maintain consistency, speed, and quality.
  • Prepare and plate sushi, sashimi, nigiri, maki rolls, and other Japanese items to a high standard.
  • Handle raw seafood and fresh ingredients safely, including cutting, storing, and preparing them correctly.
  • Keep flavor, presentation, portion size, and brand standards aligned at all times.
  • Manage mise en place, ingredient prep, sauces, garnishes, and daily production requirements.
  • Track stock usage, support ordering, reduce waste, and control portions carefully.
  • Follow food safety, hygiene, and sanitation rules without compromise.
  • Contribute to menu development, recipe refinement, and product enhancements.
  • Keep the workstation and kitchen area clean, orderly, and efficient.

Requirements

  • Hands-on experience preparing sushi and working with Japanese cuisine.
  • Background as a Senior Sushi Chef or Sous Chef.
  • Strong knowledge of seafood handling, raw fish preparation, sushi rice, sauces, and presentation methods.
  • Excellent knife handling ability and a sharp eye for detail.
  • Proven ability to lead and train a team in a high-pressure kitchen.
  • Solid understanding of food safety, hygiene, and quality expectations.
  • Strong leadership, communication, and teamwork capabilities.
  • Ability to adapt, stay organized, and work well in a multicultural setting.
  • Genuine passion for quality, service, and memorable dining experiences.
