Role overview
The Bridge Tavern in Wicklow is hiring a Senior Chef de Partie for a full-time, on-site position. In this role, you will take charge of one kitchen section and make sure every dish leaves the pass on schedule, meets the venue’s standards, and is presented consistently well.
Key duties
- Run a designated section of the kitchen independently and keep service flowing smoothly.
- Prepare mise en place, cook menu items, and plate dishes to the required standard.
- Maintain quality, consistency, and presentation across all items produced in your station.
- Work closely with the Head Chef and Sous Chef to support day-to-day kitchen operations.
- Guide junior kitchen team members and help train new starters.
- Keep a close eye on food safety, hygiene, and HACCP requirements at all times.
- Coordinate with other sections during service to ensure efficient timing and communication.
- Track stock levels for your section and help with ordering when needed.
- Reduce waste wherever possible and contribute to good stock control practices.
- Help develop menu ideas and improvements, especially when working with fresh, seasonal ingredients.
- Keep your workspace clean, organised, and efficient throughout the shift.
Required experience and competencies
- Previous experience as a Chef de Partie, or in a similar senior kitchen role, within a high-quality hospitality setting.
- Strong practical cooking ability in a professional kitchen.
- Sound understanding of kitchen hygiene, food safety, and HACCP standards.
- Confidence to manage a kitchen section on your own during busy service periods.
- Clear communication skills and the ability to work effectively with colleagues and management.
- Leadership ability, including coaching and supporting junior staff.
- Good organisational skills and the capacity to stay calm and effective under pressure.
- Experience using fresh, seasonal produce and contributing to menu development is an advantage.
- A relevant culinary qualification or apprenticeship, such as professional cookery training, is preferred.
- Availability for varied shifts, including evenings, weekends, and public holidays, is required.

This role is based in Wicklow, County Wicklow, Ireland. It is a full-time, on-site hospitality position.
