Barsana Aahaar is a premier restaurant located in Sector 36, Chandigarh, specializing in 100% pure Sattvik cuisine. This unique dining establishment strictly excludes onion and garlic from its menu, offering authentic Braj-style vegetarian dishes. We seek a skilled and dedicated Indian Cook (Halwai) who excels in maintaining consistent taste, highest quality, and kitchen hygiene in a bustling environment.
Key Responsibilities
- Prepare genuine 100% Sattvik meals following standardized restaurant recipes without onion and garlic.
- Cook diverse Indian curries, dals, kadhi, and vegetable dishes.
- Make traditional breads such as Poori, Bedmi Poori, Bhatura, Khasta Kachori, and samosas.
- Prepare a variety of popular chaat items including Aloo Tikki, Dahi Bhalla, Chana Chaat, and Gol Gappe.
- Produce authentic Indian sweets like Jalebi, Suji Halwa, Moong Dal Halwa, Kheer, and other seasonal desserts.
- Ensure each dish consistently meets quality and presentation standards.
- Adhere strictly to recipe guidelines and portion control.
- Maintain cleanliness, hygiene, and safety standards in the kitchen at all times.
- Collaborate effectively with kitchen staff to provide swift service during peak hours.
- Minimize food wastage by efficient use of ingredients.
- Assist with daily food preparation, production planning, and monitor stock; report shortages to management.
- Follow opening and closing standard operating procedures (SOPs) for the kitchen.
Required Skills & Qualifications
- Proficient in making Indian curries and vegetable preparations.
- Expertise in preparing traditional Indian breads and snacks like Poori, Bhatura, Bedmi Poori, Kachori, and Samosa.
- Experienced in making chaat dishes including Aloo Tikki, Dahi Bhalla, Chana Chaat, and Gol Gappe.
- Skilled in preparing Indian sweet dishes such as Jalebi, various Halwas, and Kheer.
- Ability to maintain speed and efficiency in a fast-paced kitchen during busy periods.
- Strong understanding of kitchen hygiene and food safety requirements.
- Capable of working collaboratively as part of a team with a positive mindset.
- Consistently maintain the quality and taste of food items.
- Excellent time management skills.
- Experience working in restaurants, dhabas, or quick service restaurants (QSR) is preferred.
Typical Daily Activities
- Prepping necessary ingredients before service begins.
- Cooking breakfast, lunch, and evening snacks according to planned schedules.
- Frying and preparing fresh Pooris, Bhaturas, Kachoris, and Samosas.
- Making various curries, dal, and sweets as demanded.
- Ensuring orders are ready promptly for customer requests.
- Continuously maintaining cleanliness and organization in the kitchen throughout the day.
- Monitoring stock utilization to minimize waste.
- Assisting team members during high-demand service times.
- Cleaning and arranging workspace and equipment at the end of the day.
Experience & Additional Information
- At least 2 years of experience as an Indian Cook or Halwai in a restaurant, hotel, dhaba, or QSR setting.
- Experience with Sattvik or purely vegetarian cooking is an advantageous addition.
