About the role

Mill Race Moto is opening a new independent café and bakery near Colchester, Essex, about 2 miles from the town centre. This is a start-up environment with a strong focus on high-quality baking, a welcoming community feel, and the chance to help shape the business from day one.

The position is for a lead baker who can produce consistent, high-standard breads, sourdoughs, pastries, and other baked items in a brand-new commercial kitchen. The role is fully hands-on and suits someone who enjoys working to exacting standards while contributing ideas that help the menu evolve.

Working pattern and location

This is a full-time role working 5 days per week, including weekends. The workplace is located just outside Colchester town centre, so dependable transport is important, especially for early starts when public transport may be limited.

Key responsibilities

You will be responsible for the daily baking output and the smooth running of dough production from start to finish. The role also includes hygiene, stock control, and product development support.

  • Prepare and bake breads, sourdoughs, pastries, and daily specials.
  • Handle dough production from scratch and maintain control over fermentation, proofing, and baking conditions.
  • Keep food safety, HACCP standards, and kitchen cleanliness at a consistently high level.
  • Monitor ingredients, reduce waste, and place supply orders as needed.
  • Share ideas for seasonal menu changes and new product development.

About you

The ideal candidate is a committed baker who takes pride in the craft and can work confidently in both commercial production settings and traditional baking methods. Early mornings, consistency, and reliability are essential.

Requirements

  • Strong hands-on experience with both machine mixing/kneading at commercial scale and manual kneading techniques.
  • Previous work in a professional bakery or a busy high-volume café kitchen.
  • Sound technical understanding of baker’s percentages, temperature management, and sourdough culture handling.
  • Dependable attendance, strong work ethic, and comfort with early start times.
  • A valid driving licence and reliable personal transport are strongly recommended because of the location and limited early transport options.

Compensation and benefits

The salary is £35,000 per year, plus service charge and paid overtime. The role also offers a fixed 5-day week, giving you two consistent days off, and the opportunity to work in a modern, well-equipped kitchen with a supportive team.
