Role Overview
The Food Safety Specialist holds the primary duty of enforcing and maintaining rigorous health, safety, sanitation, hygiene, and environmental standards within food hall operations. This role monitors stewarding functions, compliance with food safety protocols, sanitation measures, waste management, and oversees maintenance coordination, creating a safe and hygienic environment for tenants, staff, and visitors.
Key Responsibilities
- Ensure strict adherence to all health, safety, sanitation, and environmental regulations consistent with local laws and company policies.
- Develop, establish, and maintain a detailed HACCP management framework.
- Conduct systematic daily and weekly inspections and audits to detect safety risks, hygiene lapses, or maintenance needs.
- Oversee sanitation and safety standards in dishwashing and stewarding sections continuously.
- Monitor cleanliness and food safety compliance among tenants operating in food hall pods.
- Collaborate with the TR Manager to deliver food safety support and conduct audits.
- Identify and report any safety hazards or non-compliant issues to management and coordinate corrective measures.
- Lead and supervise stewarding team activities to ensure effective cleaning and sanitation workflows.
- Supervise dishwashing processes, ensuring proper washing, sanitization, and storage of tableware, utensils, and kitchen implements.
- Maintain cleanliness across kitchens, dining zones, storage areas, dishwashing stations, and service spots.
- Manage waste disposal and recycling in line with environmental regulations.
- Guarantee cleanliness of guest restrooms and public areas, including outdoor terraces and common spaces.
- Oversee inventory management for cleaning chemicals, supplies, disposables, and equipment, maintaining adequate stocks.
- Coordinate procurement of cleaning materials and operational supplies with Operations Manager and Purchasing department.
- Perform bi-weekly inventory audits of crockery and cutlery, providing detailed reports to management.
- Train, supervise, and inspire the stewarding and sanitation workforce to achieve optimal team performance.
- Conduct quarterly food safety training sessions for tenants and pod operators.
- Provide ongoing staff education on food safety, hygiene, sanitation, and workplace safety procedures.
- Organize stewarding team schedules, duty assignments, and manage vacation requests in conjunction with management.
- Evaluate team performance through regular feedback and formal assessments.
- Coordinate promptly with external maintenance providers to resolve facility issues.
- Monitor and report damaged furniture, equipment malfunctions, and other operational defects.
- Facilitate pest control scheduling and supervise activities during treatments.
- Lead cleanliness and sanitation audits for all pods and communal areas routinely.
- Inspect storage conditions for vegetables, dry goods, and refrigeration units.
- Deliver weekly operational and compliance updates to the Operations Manager.
- Report facility and operational concerns related to dining hall functions and coordinate resource needs.
Qualifications and Experience
- A minimum of three years in a managerial role within a similar environment.
- Certified at Level 3 or above in HACCP and Food Safety.
- Additional certifications preferred include Fire Safety Training, First Aid, and Sustainability or Environmental Management credentials such as ISO 14001 Lead Implementer/Auditor.
