Director of Food and Beverage

Position Overview

This leadership role directs all food and beverage and kitchen operations within the hotel environment, which may include restaurants, bars, room service, and banquet/catering services. The position is responsible for formulating and executing strategic plans for the department, ensuring alignment with brand service standards and initiatives. The Director aims to satisfy target customer demands, maintain employee engagement, maximize revenue, and improve the financial performance of the food and beverage division.

Educational and Experience Qualifications

• High school diploma or equivalent with at least 6 years of relevant experience in food and beverage, kitchen, banquet management, or related fields.
• Alternatively, a two-year degree from an accredited university in Food Service Management, Hotel and Restaurant Management, Hospitality Management, Business Administration, or related disciplines combined with a minimum of 4 years of relevant experience.

Skills and Knowledge Required

• Understanding principles and processes of delivering excellent customer and personal services including assessing needs, meeting quality standards, and evaluating customer satisfaction.
• Proficiency in managing financial resources, including cost accounting and budgeting to manage expenditures.
• Familiarity with administrative and managerial principles such as strategic planning, resource allocation, human resource modeling, leadership, and coordination of people and resources.
• Business acumen with awareness of market trends, enterprise-wide goals, and ability to diagnose strengths, weaknesses, opportunities, and risks to develop strategies accordingly.
• Material resource management skills to acquire and supervise the use of necessary equipment, facilities, and materials.

Core Responsibilities

• Establish and maintain clear food and beverage goals, delegate responsibilities to leadership teams, and hold them accountable for service behaviors.
• Analyze financial reports to ensure budget compliance, recommend capital for equipment and renovations, and develop strategies to enhance department financial performance.
• Create challenging yet achievable objectives to guide daily operations and improve service quality.
• Develop and control departmental budgets, monitor actual and projected sales to meet targets, and ensure adherence to cash and liquor control policies.
• Lead and motivate the food and beverage teams through interpersonal skills, ethical leadership, fostering mutual trust, respect, and collaboration.
• Set examples of proper conduct, identify profit improvement methods including cost estimation and new business opportunities, encourage innovation and necessary change.
• Maintain continuous communication within all food and beverage sectors and cultivate open collaborative relationships with subordinates and the broader team.
• Design and implement food and beverage business strategies aligned with brand goals.
• Coach and develop team members to enhance their skills and knowledge, introduce market-driven new products to boost revenue and maintain competitive advantage.
• Deliver exceptional customer service to exceed expectations and retain guests, utilize feedback mechanisms to identify areas for improvement and empower staff accordingly.
• Conduct human resources activities such as setting performance standards, monitoring wages and costs, hiring qualified leadership, performing performance reviews, addressing employee concerns fairly, and providing feedback to enhance performance.
• Ensure timely communication with executives and staff, evaluate information efficiently to solve problems, and manage procurement for food, beverages, and supplies.
