Job Overview and Responsibilities

  • Manage and supervise all responsibilities related to the Cost Controller position with diligence
  • Maintain professional grooming standards consistently
  • Attend assigned training sessions promptly
  • Collaborate respectfully and effectively with team members and other departments
  • Stay informed about daily operations and maintain comprehensive knowledge of all hotel facilities
  • Handle financial administration and coordinate with Corporate Finance
  • Plan, organize, communicate, and administer department functions effectively
  • Ensure smooth operation of the food and beverage department through structured organization and administration
  • Implement and uphold internal control and audit systems to monitor food and beverage costs efficiently
  • Maintain positive employee relations and prepare work schedules
  • Support human resource development and foster effective communication within the department and across the hotel
  • Verify supplier invoices and monthly statements; cross-check invoices and delivery receipts with purchase orders and market listings; maintain records of goods received without invoices; prepare accounts payable vouchers
  • Track and control goods movement within receiving, storerooms, main kitchen, and food and beverage outlets
  • Participate in periodic inventory counts covering food, beverages, mini-bar items, operating supplies, and standard operating equipment; prepare physical inventory reports; conduct perpetual inventories as needed
  • Calculate daily and monthly food & beverage costs per outlet; monitor daily profit and loss statements for outlets where applicable
  • Cost recipes before new menu implementation; prepare provisional profit and loss statements for special events such as festivals and parties
  • Compile daily and monthly sales statistics; review slow-moving, high-cost, and low-cost items in consultation with the Director of F&B
  • Conduct monthly analysis of outlet activities including revenues, sales costs, payroll, standard operating equipment, other expenses, and productivity; prepare monthly profit and loss statements per outlet
  • Prepare month-end closing reports for food, beverage, mini-bar, and operating supplies; coordinate month-end adjustments with Accounting Manager and/or Director of Finance
  • Perform additional duties as assigned by the Accounting Manager or Director of Finance
