About the Role

Based in the scenic Scottish Highlands, this position is within the kitchen department at a luxury Highland hotel. The Commis Chef will work closely with the Head Chef and Sous Chef to support the preparation and delivery of high-quality dishes during breakfast, lunch, and dinner services. This role requires contributing to a well-organized kitchen ensuring hygiene, quality, and efficient operations.

Primary Responsibilities

  • Assist senior chefs with food preparation and cooking activities.
  • Maintain excellent standards of food quality, consistency in presentation, and adherence to recipes.
  • Follow all food safety, hygiene, and health regulations including HACCP guidelines.
  • Keep work areas clean, organized, and fully compliant with sanitation standards.
  • Manage stock by implementing proper rotation and storage procedures and supporting inventory controls.
  • Collaborate effectively with kitchen staff to ensure smooth service throughout shifts.
  • Report any equipment issues or shortages to the relevant personnel immediately.

Shift Specific Duties

  • Breakfast: Prepare and cook breakfast items such as eggs, bacon, sausages, pastries, cereals, and continental dishes. Maintain and replenish the breakfast buffet or service area while catering to guests’ dietary requirements including vegetarian and gluten-free options, plus assist with early mise en place for subsequent meals.
  • Lunch: Support preparation of light meals, including sandwiches, soups, salads, and daily specials. Aid in delivering bar, café, or restaurant lunch services ensuring fast turnaround, portion control, and consistent plating. Assist in prep work for dinner where necessary.
  • Dinner: Assist in executing dinner menus involving starters, main courses, and desserts. Follow plating instructions as directed by senior chefs, work on designated sections under supervision, and ensure smooth teamwork during busy periods. Participate in kitchen closing routines including cleaning and setting for the next day.

Candidate Requirements

  • Prior experience working in a kitchen environment is beneficial but not mandatory.
  • Basic culinary knowledge including food preparation and cooking techniques.
  • Awareness of food hygiene and safety practices.
  • Ability to perform well under pressure in a fast-paced setting.
  • Good communication and teamwork skills.
  • Flexibility to work varying shifts including early mornings, evenings, weekends, and statutory holidays.
