Role overview
Ezdan Palace Hotel in Doha is looking for a Chef de Partie - Butchery to take charge of the butchery area within the kitchen. This role focuses on delivering meat preparations and plated meat dishes that consistently meet high standards of quality and presentation.
Key responsibilities
- Prepare, trim, cut, and portion different meat cuts in line with the restaurant’s standards.
- Store and handle all meat products correctly to preserve freshness and food quality.
- Work closely with the head chef to develop new meat-based dishes and recommend menu enhancements.
- Guide, train, and oversee junior team members assigned to the butchery section.
- Track stock availability and raise purchase requirements for meat supplies when necessary.
Candidate profile
The ideal candidate has practical experience working as a butcher or as a Chef de Partie with a butchery focus. Strong knowledge of meat cuts and cooking methods is important, along with the ability to stay composed and productive in a busy kitchen. Good communication and leadership abilities are also needed. A food handling and safety certification will be considered an advantage.
