About the role

We are seeking an enthusiastic Baker who is comfortable with early mornings, strong on technical execution, and eager to take ownership of a newly launched micro-bakery program. This is not a routine industrial bake-and-pack role. You will work closely with the technical fermentation kitchen, using house-made koji, lacto-ferments, and seasonal ingredients to produce a fresh and evolving range of baked goods every day. If you enjoy working with wild yeast, high-hydration doughs, and inventive pastry formats, this role is built for you.

Responsibilities

  • Run the morning bake operation from dough preparation through to the finished bake, keeping the display and kitchen service areas consistently supplied with high-quality artisanal items.
  • Oversee sourdough production, including daily feed maintenance, long fermentation schedules, and preparation of the house 100% hydration focaccia.
  • Prepare a varied daily rotation of specialty bakes from scratch, such as potato buns, sweet and savory scrolls, milk buns, and laminated savory pies.
  • Work with the wider kitchen team to incorporate fermented elements, pickles, and other house-produced ingredients into breads, fillings, and toppings.
  • Bake daily cakes and contribute to the development and execution of modern Australian plated desserts for cafe service.
  • Manage the early-morning production schedule so fresh products are ready before the coffee rush begins.

Qualifications

  • More than 5 years of practical experience in an artisanal bakery or a forward-thinking restaurant pastry section, with solid knowledge of baker’s percentages, flour behavior, and fermentation management.
