Job Overview

The Military Department of the State of Tennessee is seeking a skilled Baker located at the McGee Tyson Air National Guard Base in Louisville, TN. The role involves managing bakery production for an average daily service of over 200 military personnel, and occasionally 400+ personnel. This base is the only full-time dining facility in the Air National Guard, supporting training for multiple military branches and international personnel.

Key Responsibilities

  • Prepare a variety of baked goods including breakfast pastries, breads, rolls, and desserts.
  • Innovate and develop new menu items on a rotating schedule.
  • Expertly decorate baked items such as cream pies using pastry bags and appropriate garnishes.
  • Operate mixing and blending equipment, setting correct times and speeds per recipe requirements.
  • Accurately measure ingredients to prepare batters, doughs, fillings, and whipped creams.
  • Maintain sufficient inventory of baked goods and ensure proper refrigeration and storage.
  • Organize and distribute baked products on mobile carts tailored to different outlets or events.
  • Maximize use of leftover ingredients by incorporating them into new products.
  • Thoroughly clean, dismantle, and store baking tools and equipment including ovens, mixers, proofers, floors, freezers, and refrigerators.

Qualifications

  • High school diploma or equivalent.
  • At least four years of professional baking experience.
  • Demonstrated ability and knowledge in safely operating standard food service equipment.
