Role Overview and Responsibilities
- Prepare and submit daily, weekly, and monthly reports to the Cluster Hygiene Manager and Executive Sous Chef for their approval.
- Ensure all supervised employees maintain personal hygiene and present themselves appropriately.
- Conduct training sessions and meetings in collaboration with Training Managers and chemical suppliers.
- Report unusable products to the Executive Sous Chef, document them as breakages, and maintain updated par levels for equipment.
- Uphold proper sanitation standards according to local health and sanitation regulations.
- Manage vendor contracts, including garbage disposal, chemical suppliers, exterminators, and night cleaning, arranging special cleaning schedules when necessary.
- Oversee proper sorting and removal of all Food & Beverage waste, ensuring it is transferred correctly to the garbage room.
- Coordinate maintenance of all back-of-house equipment with the Executive Sous Chef and Chief Engineers, including scheduling weekly kitchen cleanings.
- Work closely with the Food & Beverage Manager and Banquet Manager to manage equipment for festivals, promotions, and VIP banquet setups.
- Submit monthly status reports of the Stewarding Department to the Executive Sous Chef.
- Maintain a healthy and safe workplace environment at all times.
- Manage the team effectively by providing necessary training on all aspects of stewarding and hygiene standards to both permanent staff and casual labor.
- Keep a department communication logbook current and update the notice board regularly.
Qualification Requirements
Applicants should have completed post-secondary education or hold relevant qualifications in Hotel Management, ensuring they possess the necessary background for maintaining the standards required in the hospitality environment.
