Chinese Cook

Role Overview

As a Chinese Cook at Ankita Bar and Restaurant in Goa, you will be responsible for preparing and cooking authentic Chinese cuisine in line with the restaurant's standards while ensuring quality, hygiene, and efficient kitchen operations.

Key Responsibilities

• Prepare Chinese dishes following established recipes, including cutting vegetables, meats, and seafood accurately.
• Make sauces, gravies, stocks, marinades, and seasonings maintaining correct portions.
• Operate kitchen appliances like wok, Chinese range, and fryer safely and maintain consistent cooking quality.
• Ensure food is cooked correctly regarding taste, texture, color, and aroma, avoiding undercooking or overcooking.
• Check ingredient freshness prior to use and maintain consistent dish taste and presentation daily.
• Follow hygiene and food safety protocols, including personal cleanliness, proper storage at correct temperatures, and preventing cross-contamination.
• Control costs by minimizing wastage of vegetables, meats, seafood, oil, sauces and other ingredients through proper portioning and careful preparation.
• Work effectively during service by reading kitchen order tickets (KOTs), coordinating with team members, and ensuring each dish is garnished and plated correctly before serving.
• Perform closing duties such as sanitizing workstations and equipment, storing leftovers properly, cleaning utensils, checking stock levels, and reporting any issues to the Kitchen Manager.
