Overview
- Oversee quality operations during production shifts in the plant.
- Ensure achievement of shift KPIs, including WIG, leakages, and zero red complaints.
- Maintain highest product quality and minimize customer complaints via rigorous online quality checks and finished product inspections.
- Implement effective quality control systems, standards, and maintain physical process environments.
- Troubleshoot during production to reduce waste and uphold quality standards.
- Manage compliance with GMP, GHK, GLP, and facilitate internal and external audits such as HACCP, AIB, personal hygiene and process audits.
- Train and develop quality check personnel.
- Verify quality of potatoes issued for production.
Key Responsibilities
- Confirm potatoes meet standard specifications before production.
- Perform fry-sample Cook Tests to evaluate undesirable color %, internal defects, and greening %.
- Report findings to the Agro Department and recommend required number of pickers for each lot.
- Make acceptance or rejection decisions about potato lots.
- Repeat Cook Tests biweekly and as necessary for potatoes under long-term warehouse storage.
- Execute online quality checks throughout production, ensuring adherence to quality standards.
- Conduct visual inspections and monitor critical machine parameters, including peelers, fryers, slicers, conveyors, and seasoning equipment.
- Conduct hourly checks on potato peeling, slice thickness, and moisture content.
- Decide on the use of anti-foaming agents and blanching requirements using Hunter Color Tests.
- Monitor fryer oil status every 4 hours for FFA, OV, PV, contaminants, taste, odor and specific gravity, comparing with gold standards.
- Assess fried chips hourly for quality parameters such as PA, oil %, soft centers, blisters, dark flakes, and clusters.
- Measure bulk density, moisture, seasoning, and size for non-PC products.
- Implement corrective actions and provide feedback to operators for process improvements.
- Communicate picker needs, product concerns and corrective steps promptly to relevant supervisors and managers.
- Alert Quality Manager for critical issues requiring comprehensive trials on potato lots.
- Conduct half-hourly and hourly quality checks in packaging areas for air leakage, weight, batch printing and air fill standards.
- Carry out nitrogen flushing and random film quality checks based on production complaints.
- Oversee machine calibration related to moisture and oil content detection and ensure timely equipment maintenance (e.g., slicer blade replacement every 1.5 hours, peeler roller changes).
- Maintain comprehensive documentation, including end-of-shift reports, Weak Link forms, daily quality reports, and quality wall meeting records.
- Host regular quality review meetings and ensure participation from cross-functional teams for quality improvements and issue resolutions.
- Perform weekly housekeeping audits to enforce safety, hygiene, and compliance with workplace standards.
- Manage hold material to limit wastage by clearing holds within 48 hours and reporting with appropriate tagging and analysis.
- Ensure compliance with statutory laws such as Weights and Measures and PFA, and maintain relevant documentation.
- Assist in investigating and resolving customer complaints by identifying root causes and implementing corrective plans.
- Lead or participate in TPM activities for enhanced plant operation and quality.
- Promote a culture of quality awareness, cost consciousness, and continuous improvement within the department and plant.
- Comply with SOX requirements and act as a control owner for I2C processes.
- Document all quality-related procedures, systems, findings, hazards, and corrective actions thoroughly.
Qualifications and Experience
- B.Tech in Food Technology is required.
- 3 to 5 years of experience with exposure to food safety and ISO standards.
- Familiarity with FSSAI, HACCP, AIB, and TPM systems is preferred.
