Job Overview

The Hygiene Manager at Marriott International is tasked with ensuring all operational activities comply fully with hygiene and food safety standards. This role involves offering expert advice on proper food handling techniques, conducting food hygiene training sessions for new employees and associates, and proactively identifying potential risk points within food operations to implement necessary corrective measures. Additionally, the manager provides technical guidance on product labeling to meet government regulations.

Candidate Qualifications

  • A degree from an accredited university in Environmental Health, Hotel and Restaurant Management, Hospitality, Business Administration, or a related discipline.
  • A minimum of three years' experience managing hygiene, food safety, or sanitation in a luxury or five-star hotel or large hospitality setting.
  • HACCP certification is mandatory; certification in Food Safety Management Systems such as ISO 22000 or FSSC 22000 is preferred.

Core Responsibilities

  • Ensure Marriott International Brand Standard Audit compliance across all operations.
  • Advise and supervise food handlers on correct food handling practices and monitor adherence.
  • Identify critical control points in food operations and take preventive corrective actions.
  • Verify compliance with food hygiene legislation, licensing requirements, and codes relating to food service.
  • Provide technical advice on product labeling to ensure government compliance.
  • Offer in-house food hygiene training to all food handlers including new hires and trainees.
  • Address customer and regulatory complaints or inquiries concerning food hygiene.
  • Perform daily kitchen inspections focusing on personal, environmental, and food hygiene; devise corrective actions when needed.
  • Undertake regular vendor inspections alongside purchasing and culinary teams.
  • Carry out internal Brand Standard Audit inspections with culinary and cleaning teams.
  • Inspect kitchen equipment regularly and ensure defects or non-conformities are resolved promptly.
  • Manage cleaning programs across all food and beverage areas, analyzing trends and recommending improvements.
  • Build and nurture collaborative relationships with staff.
  • Coordinate with pest control services to resolve and monitor pest-related issues.
  • Maintain and continuously improve hygiene standards throughout the property.
  • Regularly update food safety standards and reinforce best practices among all food handlers.
  • Maintain comprehensive documentation of hygiene and food safety policies and procedures.
