Role Overview
We are seeking a Bar Manager to lead the bar operations at Cliveden Bar and Sanctum within Pullman East Melbourne. This leadership position involves crafting an innovative cocktail and beverage program, guiding a motivated bar team, and delivering an exceptional guest experience across two premier bars. The role offers significant creative freedom, exposure during major Melbourne events, and strong support from an experienced F&B leadership team.
Key Responsibilities
- Oversee daily bar functions at both Cliveden Bar and Sanctum, ensuring high standards of efficient and engaging service.
- Develop and refine a contemporary and market-relevant beverage menu encompassing cocktails, wine, beer, and spirits.
- Lead, schedule, and nurture the bar staff to maintain consistent quality and foster a positive team environment.
- Manage inventory, cost controls, and supplier partnerships to maximize profit and minimize waste.
- Serve as an approachable host, connecting with guests and optimizing revenue during critical times and events.
Preferred Qualifications and Experience
- Experience in roles such as F&B Supervisor, Assistant Manager, or Duty Manager within upscale hotels or high-traffic bar settings.
- Proven leadership in high-pressure service environments with a strong presence on the floor and conflict resolution skills.
- Possession of a current Victorian RSA certification and valid Australian work rights; food safety certification is an advantageous addition.
- In-depth knowledge of wines, cocktails, and modern dining trends, with demonstrated ability to train and promote upselling techniques.
- Strong grasp of OH&S standards, food safety, and RSA regulations relevant to hotel operations.
- Competence with POS software and Microsoft Office; familiarity with hotel PMS and events management systems is beneficial.
- Flexibility to work rotating shifts including mornings, evenings, weekends, public holidays, and peak event days at the MCG.
- Excellent communication skills and a composed, solution-oriented attitude under stress.
- Exemplary grooming and professional appearance consistent with Pullman’s standards.
