Role Overview
The Assistant Restaurant & Bar Manager supports the overall food and beverage operations by planning, organizing, and guiding daily activities. This role involves administrative duties, marketing aid, promotion execution, and ensuring profitability and exceptional guest experiences within the outlet.
Key Responsibilities
- Assist in preparing and managing the outlet's budget and forecasts for revenue and expenses on a weekly and monthly basis.
- Analyze and prepare weekly and month-end performance reports, highlighting variances from planned business goals.
- Participate in management review meetings to assess progress toward business objectives and assist in crafting annual outlet business plans when the manager is unavailable.
- Collaborate with the kitchen and marketing teams to design and evaluate profit improvement initiatives and promotions, providing post-promotion reports to the Food & Beverage Manager.
- Help establish and monitor control measures to keep food, beverage, labor, and operating supply costs within budget limits.
- Offer support to other Food & Beverage outlets during peak periods or as necessary.
- Uphold and promote exemplary LQA standards within the outlet.
- Conduct daily departmental briefings to communicate essential updates and instructions to team members.
- Supervise staff to ensure timely and quality completion of outlet tasks according to standards.
- Cultivate positive relationships with guests, recognizing regular patrons and tailoring personalized service experiences.
- Address guest complaints and feedback effectively and professionally.
- Manage administrative duties relating to cashier and bar operations in accordance with company policies.
- Maintain communication logs and update notice boards within the department.
- Monitor stock levels and equipment to prevent shortages impacting operations and guest service.
- Ensure cleanliness and hygiene in the outlet and back of house complies with food safety and sanitation regulations.
- Possess thorough knowledge of food and beverage offerings, preparation methods, outlets, and hotel features.
- Implement and maintain health, safety, and security procedures consistent with LQA standards.
- Attend all management briefings, meetings, and training sessions as required.
- Ensure proper handover with incoming shifts for seamless operations.
- Recruit, interview, and select outlet staff when necessary.
- Identify and mentor team members with potential for growth.
- Conduct regular performance appraisals and monitor professional conduct and appearance of staff.
- Design and deliver ongoing training programs aligned with business needs to develop team skills.
- Prepare weekly staff schedules optimizing resources and maintaining service standards.
- Manage payroll documentation and gratuity reporting.
- Hold monthly team meetings to share information, gather feedback, resolve issues, and promote communication within the department.
Qualifications
- Education level: High School diploma, GED, Diploma in Hotel Management, or an equivalent qualification.
- At least two years of experience in a comparable role or managerial position.
- Comprehensive knowledge of beverage trends including fermentation, cocktails, non-alcoholic options, and wines.
- Fluent in English, both written and spoken.
- Professional demeanor with strong human resource management skills and business savvy.
- Proficiency with MS Excel, Word, and PowerPoint.
