Role Overview
The Sandcastles Line Cook is responsible for the preparation, setup, and quality assurance of all food items, including meats, fish, and poultry, in the Sandcastles kitchen environment.
Key Responsibilities
- Prepare food items according to standard recipes and guest specifications to maintain consistency, including moving heavy food products when necessary.
- Create daily supply and food requisition orders for production needs.
- Apply mathematical skills to accurately follow recipes.
- Inspect and select only the highest quality food products for menu preparation, reporting any issues to the Chef.
- Monitor proper food storage and portion control, particularly in meat cuts, to uphold product quality.
- Maintain cleanliness and proper function of refrigeration, kitchen equipment, and work areas in compliance with health regulations, reporting malfunctions promptly.
- Ensure all food products and procedures adhere strictly to health code standards.
- Verify the freshness, storage, and labeling of station products for every shift.
Additional Duties
- Perform general cleaning using standard hotel cleaning materials to meet health standards.
- Assist with tasks such as moving supplies and cleaning spills to maintain a safe work environment.
Required Knowledge, Skills, and Abilities
- Solid understanding of broiler, sauté, and fry cooking techniques.
- Knowledge of sanitation standards.
- Familiarity with kitchen equipment operation including stoves, ovens, broilers, slicers, steamers, and kettles.
- Basic math skills for recipe comprehension, measurements, and portion control.
- Proficiency in English for communication, recipe reading, and requisition completion.
- Manual dexterity to operate kitchen tools such as knives, spoons, spatulas, tongs, and slicers.
- Physical capability to lift or move up to 200 pounds using hand carts or trucks and to work in confined spaces.
Qualifications
- Education: Preferred high school diploma; culinary or apprenticeship program background is advantageous. Equivalent education, training, or experience considered.
- Experience: Minimum two years of cooking experience required.
- Certifications: Must hold a Florida Sanitation Certificate or be able to obtain government-required licenses or certificates.
