Job Overview
The Cook position involves preparing, planning, and cooking meals to deliver excellent quality and satisfaction for staff and crew at Carnival Corporation’s global locations. This role ensures smooth daily kitchen operations, upholding hygiene, food safety standards, and assisting with inventory control to maintain an organized and efficient kitchen environment.
Key Responsibilities
- Prepare balanced meals on a weekly rotating menu including breakfast, lunch, and dinner for staff and crew.
- Maintain consistency in taste, presentation, portion sizes, and respect dietary restrictions.
- Adapt menus according to available supplies or special dietary needs.
- Lead kitchen activities during the Chef’s absence or rotation.
- Maintain cleanliness and hygiene in the kitchen daily, including deep cleaning storage and appliances weekly.
- Monitor and record temperatures of refrigeration and freezer units to ensure compliance.
- Dispose cooking oil and waste safely and support drain maintenance procedures.
- Adhere strictly to food safety regulations and ensure only safe, verified ingredients are used.
- Support regulatory inspections, tests, and documentation requirements.
- Manage inventory of food, supplies, and kitchen equipment, assisting with ordering and restocking.
- Utilize FIFO principles to minimize waste and maintain food safety standards.
- Provide accurate monthly reports on inventory and communicate issues to management.
- Assist in distribution of required food supplies to teams and support special events or catering functions.
- Adapt practices to meet operational needs in remote or off-grid locations.
Qualifications & Experience
- High school diploma or equivalent; formal culinary education or comparable experience mandatory; additional hospitality-related training considered advantageous.
- Preferred certifications in culinary or food safety.
- At least 2 years working in high-volume or institutional kitchen environments.
- Strong knowledge of cooking methods, such as grilling, baking, sautéing, and boiling.
Skills & Competencies
- Capable of preparing large-scale, nutritionally balanced meals.
- Well-versed in handling dietary restrictions and food allergies.
- Comprehensive understanding of food safety standards including HACCP.
- Efficient multitasking and time management in fast-paced kitchens.
- Safe operation of commercial kitchen appliances like ovens, grills, fryers, and mixers.
- Experienced in food inventory management and ordering procedures.
- Strong interpersonal, communication, and teamwork skills.
- Self-driven with ability to follow recipes and protocols independently.
- Flexible to work in remote and rotating environments and capable of maintaining up-to-date medical certification.
- Consistently maintain personal hygiene and kitchen dress code.
Additional Requirements
- Good physical condition with ability to stand for long durations and lift weights up to 50 pounds.
- Excellent organizational, critical thinking, and problem-solving aptitude including multitasking under pressure.
- Proficient with Microsoft Office and adept at data entry and reporting.
- Strong written and verbal communication skills.
