BOH Technician - Half Moon Cay

Role overview

The BOH Technician supports Food & Beverage operations across one or more Carnival Corporation-owned and operated destination venues by keeping kitchen and service areas clean, safe, orderly, and ready for daily use. The role works alongside cooks and F&B supervisors to maintain sanitation standards, assist with basic food prep, manage cleaning tasks, and help ensure smooth service in kitchen, pavilion, and beach-facing areas.

Core duties

• Maintain hygienic conditions in kitchen, pavilion, and beach service spaces.
• Carry out routine cleaning and disinfection of bins, floors, tables, prep counters, appliances, and other surfaces.
• Clean and sanitize island grills every day.
• Pressure-wash bars and pavilion areas on days when no ship is in port.
• Follow waste-handling procedures and support environmental as well as food safety standards.
• Perform scheduled deep-cleaning of equipment and kitchen systems such as ice machines, dishwashers, hoods, grease traps, floor drains, and bar fans on non-ship days.
• Complete weekly cleaning and stock rotation in freezers, chillers, walk-ins, and dry storage rooms.
• Work with the F&B Technician on drain and system upkeep.
• Gather used cooking oil and coordinate disposal with the Environmental Technician.
• Support cooks and chefs with FIFO-based stock rotation.
• Help prepare monthly reports for frozen, chilled, and dry inventory.
• Check refrigeration temperatures each day and escalate any abnormal readings right away.
• Coordinate with kitchen and F&B teams to keep operations running smoothly.
• Follow all workplace safety, hygiene, and environmental procedures.
• Take on other tasks assigned by management.

This position calls for safe handling of food-service equipment, the ability to multitask in a busy setting, and strong teamwork. The role also requires attention to cleanliness, basic food-preparation support, strong communication, and a proactive approach to solving day-to-day operational issues.

Requirements

• Basic schooling or equivalent practical experience is needed; additional study in hospitality or a related area is an advantage.
• A current and valid health certificate is required.
• 1–2 years of experience in kitchen operations, food handling, or sanitation is expected.
• Experience in hospitality or food service is preferred, though training may be considered in some cases.
• Ability to read, write, speak, and interact clearly in a team setting.
• Physically fit to stand for long periods and handle heavy grills and kitchen equipment.
• Must be able to maintain a valid full medical certificate on a bi-annual basis.
• Uniform compliance is required, including a secured hair net.
• Working knowledge of Microsoft Office, data entry, and reporting tools is expected.
• Detail-oriented, organized, and capable of critical thinking, problem-solving, and decision-making.
• Strong planning and coordination ability to manage multiple priorities within tight deadlines.
• May be required to work shifts while stationed at destination locations.
