Role Summary
The Pastry Chef is responsible for producing high-quality pastries, desserts, cakes, breads, chocolates, and other baked items, while also helping shape seasonal dessert menus and maintaining strong cost, quality, and hygiene standards.
Key Responsibilities
- Create and present pastries, desserts, cakes, breads, chocolates, and baked products to a premium standard.
- Work with the Executive Chef to design seasonal and creative dessert offerings.
- Keep taste, texture, portion size, and presentation consistent across all pastry items.
- Prepare standardized recipes and maintain accurate recipe specifications.
- Calculate and monitor recipe and menu costs to support food cost targets.
- Track pastry-related food expenses, reduce wastage, and introduce cost-efficient practices without affecting quality.
- Oversee stock levels, perform routine inventory checks, and use ingredients efficiently to avoid losses.
- Estimate ingredient needs and raise purchase requests based on operational demand.
- Follow food safety, hygiene, and HACCP requirements at all times.
- Lead, train, coach, and encourage pastry team members to sustain strong quality and productivity.
- Ensure pastry tools and equipment are used correctly, cared for properly, and maintenance issues are reported promptly.
- Work closely with other kitchen teams to support restaurant service, banquets, buffets, and special functions.
- Keep the work area clean, well-organized, and safe in line with company procedures and policies.
Requirements
- Diploma or certificate in Pastry, Bakery, Culinary Arts, or a related discipline.
- At least 3 to 5 years of experience as a Pastry Chef or in a comparable role within a hotel, resort, or fine-dining environment.
- Strong technical knowledge of pastry making, baking methods, chocolate work, sugar craft, and dessert plating.
- Solid understanding of recipe costing, food cost control, inventory handling, and purchasing processes.
- Working knowledge of HACCP and food safety standards.
- Creative approach with a sharp eye for detail.
- Strong leadership, communication, and organizational abilities.
- Ability to perform well in a busy, fast-moving environment.
