Job Overview

The Assistant F&B Cost Controller supports food and beverage cost control operations, inventory accuracy, and reporting activities. The role focuses on checking costs, monitoring stock movement, validating documents, and helping ensure that purchasing and consumption remain aligned with company standards.

Key Duties

  • Support the monitoring of food and beverage cost control processes so they remain aligned with company rules and operating standards.
  • Review supplier invoices, purchase orders, requisitions, and received goods to confirm pricing, quantities, and attached documents are correct.
  • Help prepare daily, weekly, and monthly cost reports, stock reconciliations, consumption analysis, and journal entries.
  • Track food and beverage cost percentages and highlight any cost differences for management review.
  • Take part in physical stock counts and keep inventory records accurate for food, beverage, and operating supplies.
  • Observe stock levels and assist with replenishment to keep par stock at approved levels.
  • Carry out routine checks in receiving areas, storerooms, and kitchens to make sure inventory controls are being followed properly.
  • Assist with menu costing, monitoring expensive items, and preparing cost analysis reports for operational decisions.
  • Look into stock variances and help implement corrective actions to reduce waste and control expenses.
  • Work closely with Finance, Purchasing, Kitchen, and Food & Beverage teams to support effective cost management and inventory control.
  • Maintain orderly and accurate records and filing systems related to purchasing, receiving, inventory, and cost control tasks.
  • Follow company policies, ethical guidelines, and service standards while carrying out duties in a professional and efficient way.

Requirements

  • A bachelor’s degree in Accounting, Finance, or Hospitality Management.
  • Prior experience in a comparable hotel or hospitality role is preferred, with at least 2 years being ideal.
  • Strong understanding of hotel operations, food and beverage controls, and stock management.
  • Hands-on knowledge of cost control systems, PMS platforms such as Opera, and accounting tools such as Sun and SAP.
  • Advanced capability in MS Excel and financial reporting applications.
  • Ability to evaluate food, beverage, and general inventory expenses, identify wastage, and suggest improvements.
  • Familiarity with procurement workflows, stock reconciliation, and month-end closing procedures.
  • Good analytical and numerical ability with a keen eye for detail.
  • Clear communication skills and the ability to coordinate effectively with F&B, Purchasing, and Finance teams.
