Role Overview
The Assistant Cost Controller will help safeguard food and beverage costs, strengthen inventory discipline, and support accurate financial tracking across the hotel. This role works closely with Finance, Purchasing, Kitchen, and Food & Beverage teams to keep cost control processes accurate and aligned with company standards.
Key Responsibilities
You will assist with day-to-day cost control activities related to food, beverages, and operating supplies, while helping ensure documentation, reporting, and inventory records remain accurate and up to date.
- Support the monitoring of food and beverage cost control processes so they follow company policies and defined standards.
- Check supplier invoices, purchase orders, requisitions, and goods received documentation for correctness in pricing, quantities, and backups.
- Help prepare daily, weekly, and monthly cost reports, inventory reconciliations, consumption reviews, and journal entries.
- Assist in tracking food and beverage cost percentages and identifying unusual cost movements for management attention.
- Take part in physical stock counts and keep accurate records for food, beverage, and operating inventory.
- Watch stock levels and support replenishment so approved par levels are maintained.
- Perform regular checks in receiving areas, storerooms, and kitchens to confirm inventory control procedures are being followed.
- Assist with menu costing, monitoring expensive items, and creating cost analysis reports to support operational decisions.
- Look into inventory differences and help implement corrective steps to reduce waste and control spending.
- Work with Finance, Purchasing, Kitchen, and Food & Beverage teams to strengthen inventory and cost management.
- Maintain organized records and filing systems for purchasing, receiving, inventory, and cost control activities.
- Follow company policies, ethical standards, and service values while carrying out duties professionally and efficiently.
Requirements
- A bachelor’s degree in Accounting, Finance, or Hospitality Management is required.
- At least 2 years of experience in a similar position within a hotel or hospitality setting is preferred.
- Good understanding of hotel operations, food and beverage controls, and inventory management is needed.
- Hands-on familiarity with cost control systems, PMS platforms such as Opera, and accounting software such as Sun or SAP.
- Strong command of MS Excel and financial reporting tools.
- Ability to review food, beverage, and general stock costs, identify wastage, and suggest improvements.
- Working knowledge of procurement workflows, stock reconciliation, and month-end closing processes.
- Strong analytical ability, numerical accuracy, and attention to detail.
- Good communication and coordination skills for working with departments such as F&B, Purchasing, and Finance.
