Role Overview

We are looking for a seasoned, energetic, and commercially minded Director of Operations to manage the day-to-day food and beverage operations of a five-star hotel with 20 outlets and a busy Meetings and Events operation. This position calls for a leader with deep Food & Beverage expertise, proven success in the Middle East hospitality market, and direct experience running five-star properties with multiple restaurants, bars, lounges, banqueting, in-room dining, and lifestyle venues.

The right candidate will be a forward-looking hotel professional who can sustain outstanding operational standards while also shaping new trends, building innovative F&B concepts, launching new outlets, and helping position the property as a leader in lifestyle hospitality.

Key Responsibilities

  • Direct the full daily operation of the food and beverage function, making sure every sub-department delivers five-star service, excellent execution, guest satisfaction, and strong financial results.
  • Provide overall leadership across Food & Beverage, Culinary, Banqueting, and Stewarding.
  • Drive performance across multiple outlets such as restaurants, bars, lounges, banquets, room service, and any lifestyle or entertainment venues.
  • Create and introduce fresh F&B concepts, outlet launches, pop-ups, activations, guest experiences, and trend-driven dining ideas.
  • Monitor luxury hospitality, lifestyle dining, entertainment, wellness, and experiential travel trends and turn them into successful commercial offerings.
  • Collaborate with the General Manager and ownership on annual business plans, budgets, revenue plans, cost management, and operational KPIs.
  • Ensure all departments consistently meet or exceed brand requirements, luxury service expectations, hygiene standards, and local legal/regulatory obligations.
  • Increase profitability through menu engineering, upselling initiatives, pricing strategies, and promotional campaigns with strong impact.
  • Lead, mentor, and motivate a diverse multicultural team while building a culture of ownership, creativity, service excellence, and high performance.
  • Improve revenue and margins through cost discipline, productivity improvements, upselling, outlet analysis, menu optimization, and effective labour planning.
  • Work with Sales, Marketing, and Revenue teams to make the hotel’s F&B outlets attractive destinations for both resident guests and the local market.
  • Support pre-opening or rebranding assignments when needed, including concept development, staffing plans, SOP creation, training, OS&E, FF&E coordination, menu creation, and launch execution.
  • Handle guest feedback, VIP service requirements, service recovery, and continuous improvement across all operating areas.

Candidate Profile

The ideal applicant will bring 10 to 15 years of experience in luxury hotels, including 3 to 5 years in a senior operational leadership role such as Director of F&B or a comparable position. A strong Food & Beverage background is essential. Prior exposure to the Middle East or GCC luxury hotel market is highly desirable.

Experience should include work in five-star hotels or luxury resorts with several F&B outlets and high-volume service environments. A solid track record in opening restaurants, bars, lounges, beach clubs, lifestyle concepts, or hotel outlets is important, along with experience designing innovative F&B concepts, promotions, menus, guest experiences, and market-leading activations.

The role also requires strong commercial judgement, including budget ownership, P&L management, revenue growth, cost control, and profitability improvement. You should be an effective people leader who can manage, develop, and inspire large, diverse, multicultural teams. Strong knowledge of luxury guest expectations, brand standards, lifestyle hospitality, and destination dining is important. Experience in repositioning or concept development will be a significant advantage.

Excellent English communication skills are required. Arabic or other additional languages will be considered an advantage.
