Role overview
Ballynahinch Castle Hotel & Estate, part of Relais & Châteaux, is looking for an energetic and skilled Baker to join its celebrated culinary brigade in Clifden, County Galway. The role is ideal for someone who is committed to high standards, enjoys crafting excellent baked products, and wants to contribute to memorable guest experiences.
You will work closely with the Pastry Chefs, Sous Chefs and Head Chef to produce consistently high-quality breads, scones, pastries, desserts and other baked items, while helping the kitchen run smoothly and efficiently.
Applicants may be already working in a comparable position or be ready to move up to the next stage of their culinary career.
What the role involves
The Baker will be responsible for day-to-day baked goods production and for supporting the kitchen team in delivering quality, creativity and timely service.
- Produce a varied selection of breads, pastries, desserts and other baked items to a high standard every day.
- Take part in overall kitchen food production and support operational needs as required.
- Keep recipes consistent, manage portions accurately and follow food costing guidelines.
- Work with the Head Chef and Sous Chef on production planning and daily requirements.
- Help create seasonal menus, daily specials and new bakery ideas.
- Track product quality and use ingredients carefully to reduce waste.
- Prepare and send out food in a professional and punctual manner.
- Maintain excellent hygiene, sanitation and food safety practices at all times.
- Ensure HACCP standards are followed and required records are kept up to date.
- Oversee stock rotation and proper storage of ingredients and products.
- Use kitchen equipment correctly and report any faults or maintenance concerns quickly.
- Attend daily chef briefings, quality meetings and team discussions.
- Contribute to improving training materials and standard operating procedures.
- Encourage strong teamwork, clear communication and professionalism in the kitchen.
- Carry out other reasonable tasks as assigned.
Candidate profile
The ideal person will bring bakery or pastry kitchen experience, a real interest in artisan baking, and the ability to perform well in a busy hospitality setting. Strong organisation, time management, attention to detail and a calm approach under pressure are important. A positive, cooperative attitude and a strong focus on guest satisfaction are also key.
